This beer is the first of a series focussed on hops. This will give us an opportunity to really experiment with a wide variety of hops and particularly modern varieties grown here in the UK. For this beer we actually used hops grown at the blendery. They were not originally intended for dry-hopping. But after running experiments we were really happy with the citrus and floral qualities of the hops which worked well with our base golden ale.
Process: A blend of golden ales brewed with malted barley, malted rye, malted oats and raw wheat from the 2019/2020 season and 2020/2021 season. Spontaneously fermented and aged in neutral french oak barrels. The beer was briefly moved onto freshly picked bramley cross, fuggles and mathon in tank before packaging.
Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on side and conditioned until release.
Ingredients: Malted barley (pilsner), malted rye, malted oats, raw wheat, aged hops (whole leaf fuggles & whole leaf strisselspalt), fresh hops (bramley cross, fuggles & mathon) water.
