Style : Stout ABV : 5.7% Bottle Size : 440ml Can   Kick-Start is our wake up juice, we take a strong and dark malt base, fill it with oats, and brew up a rich stout. Into that we steep freshly roasted Colombian coffee beans, courtesy of Southampton's Mozzo Coffee. The aroma is rich espresso whilst the flavour brings the malt base together - rich chocolate, roasted barley, and more coffee blend with the beans to produce a thick, rich broth.

Style : Pale Ale ABV : 4.5% Bottle Size : 440ml Can   Built to sit somewhere between West and East coast, our Symbiosis series around the idea of building on what we knew about hops and how they complimented and contrasted against each other. Pupa is the next stage in the evolution. We're taking the hops from the limelight and moving towards the yeasts that play just an important role in flavour. Expect masses of tropical fruits bursting from the can as hops and yeast dance to create a sensual panoply of aromas. Oats lend a luxurious mouthfeel and low bitterness helps to accentuate this beer into a long and juicy finish.

Pineapple, orange, and mango dominate the aroma whilst juicy apricot, mandarin and ripe mango tackle the palate. Gooey, sappy flavours blends with this ripened soup ending in a thick, slightly bitter, fruity finish.

Wild Beer Dr Todd 2019 Wild Beer
Style : Sour  ABV : 9.7% Bottle Size : 330ml Dr Todd. A beer inspired by a cocktail. Australian bartender Sam Ross created several enduring drink recipes whilst at Milk & Honey in New York, most famously the Penicillin Cocktail: a smoky, spicy mix of Scotch, honey and ginger and lemon. We have deconstructed these ingredients from the cocktail and put them all together to brew a beer we have been wanting to make for a very long time. Dr Todd is our riff on the Penicillin cocktail. The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest. The Penicillin was inspired by the Hot Toddy, invented by the revered Dr Robert Bentley Todd.

Wild Beer Redwood 2017 Wild Beer
Style : Sour Fruit Beer ABV : 5.7% Bottle Size : 330ml   The Redwood Project began in 2013 when we foraged the late summer fruits from hedgerows and farms around the brewery. These were then put into red wine barrels where they rested for a full year with some of our wildest beer before being packaged. The first Redwood was released late in 2014 as an Autumnal foraged fruit beer.  Redwood will vary year on year based on the forgeable fruits available (heavy on damsons and plums this year) and the barrels selected for the final beer by our blending team. The mixture of berries and barrels culminates in a crescendo of sweet fruits, roasted oak and vibrant acidity. Drinking Redwood 2017 is like walking through the vibrant fallen leaves, your breath fogging in front of you while you pick the last of the season’s plums with the whiff of bonfires in the air.

Style : Smoked Gose ABV : 4.0% Bottle Size : 330ml   We have brewed a barrel aged, smoked orange gose. The base beer, containing smoked malt, developed in barrels over many months, quietly gaining acidity and complexity. We then introduced home-smoked Cornish sea salt and smoked orange segments.The resulting beer is full of juicy zestiness and mouthwatering acidity while the smoked sea salt provides a decadent mouth feel and salinity. Refreshing and complex in the same mouthful the vibrancy of the citrus contrasts the delicate sweet smoke from both cherry wood and oak.

Teaming up to make a Barrel-Age Saison made from a base of white spring Tuscany Truffles and Sage. Ithas been blended in Sauterne casks to add a sweet characteristic while still letting the yeast funk up the beer. We used foraged truffles from the Alba in Northern Italy, continuing our linage in using only the finest ingredients in our beers.Based on our shared passion for pushing borders and using untraditional mixes of ingredients to make new and interesting takes on existing styles, this collaboration is uses a philosophy of balanced playfulness!

Yonder As The Crow Flies Yonder
Style : Wild Fruit Beer ABV : 5.6% Bottle Size : 375ml   Brewed as part of the Radius Project 2019, we were chosen alongside 9 other breweries from the UK and Europe to brew a beer with ingredients from a 20 mile radius around their brewery. We used our house cultures of yeast and bacteria to ferment a wild ale, brewed with water from a borehole beneath the brewery, malted barley and rye from Warminster Maltings (just under 20 miles away) and damsons picked from our landlords garden, directly behind the brewery. The results are this tart and funky beer with flavourful damson taste and aroma.

Brewed on a bed of meadow hay, Bees & Things & Flowers is a wild honey wit bier, flavoured with wild meadow flowers, ubiquitous in fields and hedgerows throughout Britain. Fermented with honey, carefully sourced from the UK, it is then conditioned on oak with foraged Chamomile, Meadowsweet, Lavender, Yarrow, Pineapple Weed & the lightest sprinkling of English hops. Yonder Loop - Apple & Rose (January 2019) Yonder
Style : Wild Ale ABV : 4.7% Bottle Size : 375ml   How could we talk of ourselves a Somerset brewery, focusing on local ingredients, without calling upon some of our cider making friends for help?The first release of Loop for 2019, brewed in Autumn 2018, featured 20% apple juice, pressed from beautifully tannic cider apples grown just a few miles up the road at Burrow Hill.With no preservatives or pasteurisation, the juice did a very good job of added to our mixed cultures and the result is a cross between a dry, farmhouse cider and a tart farmhouse saison.The addition of wild rose petals, gives a perceived floral sweetness to balance that dryness.
Yonder Loop - Blackcurrant & Lemon Verbena Yonder

Yonder Loop - Perry Pear & Juniper Berry Yonder
Style : Saison ABV : 4.6% Bottle Size : 750ml   Loop is a series of seasonal mixed fermentation beers, aged in oak and blended with a medley of seasonal, locally sourced farmed and foraged ingredients. The latest release in the series was fermented with Perry pear juice from Burrow Hill Cider Farm (Somerset Cider Brandy Company) on the Somerset levels, and infused with juniper berries, foraged in the Highlands of Scotland. The beer pours ultra pale with a pure white head of quickly subsiding foam. The high effervescence drives forward aromas of fruity and dry, farmyard cider. Whilst at the first sip, the gentle acidity balances those funky flavours against the subtle nuance of juniper. Made for sharing, but rules are made for breaking. Drink now or age in the bottle.

Yonder Suki Yonder
Style : Saison ABV : 6.0% Bottle Size : 375ml   Every now and again, whilst we’re out foraging, we discover a flavour which needs to be shared. This time, it was a spice which is surprisingly common, but most people are unaware of. Stags Horn Sumac can be found growing as an ornamental tree in gardens throughout the UK. It’s beautiful, furry red fruit cones pointing towards the sky in Autumn and luckily for us, last a little way in to the colder months. They are full of citrus flavour and are often used in Moroccan dishes.Whole cones can be steeped in water to make a refreshing drink, which gave the Sumac the nickname ‘The Lemonade tree’. Fermented with our house cultures, a gentle acidity balances the saison base and lets these wild flavours do the talking.

Style : Saison ABV : 4.6% Bottle Size : 375ml   In the Tang Dynasty of China (618 - 907), the drinking of tea changed from purely medicinal to recreational and it’s popularity grew throughout the world from that point on wards. You don’t need to be a Tasseographer to know that the British love their tea, and we are no exception here at Yonder. What better way to celebrate the humble leaf, than using the very first tea grown on British soil. This tart saison uses green tea, grown on the Tregothnan estate in Cornwall. The tea is cold steeped, alongside British and European hops, to give it slightly earthy and tannic undertones, alongside fruity and herbal notes, lifted by the gentle acidity of the base beer.
