Style : Sour ABV : 7.0% Bottle Size : 500ml After spending a weekend with our friends at Blackberry Farm Brewery foraging in the Smoky Mountains, we brought back several yeast specimens and isolated a few strains to begin the fermentation process. We collaborated with the Blackberry Farm brewers on a recipe to echo and enhance the unique characteristics of these yeast strains. Found is a delicate and tart wild ale that’s golden in appearance and brimming with lemon, clove & apple notes which are complemented by a dry and refreshing finish.

We aged this blend in Pedro Ximenez Sherry, Burgundy Red Wine and Bourbon Barrels to help create the levels of tannin and oaky vanilla notes we desire

Wild Beer Dr Todd 2019 Wild Beer
Style : Sour ABV : 9.7% Bottle Size : 330ml Dr Todd. A beer inspired by a cocktail. Australian bartender Sam Ross created several enduring drink recipes whilst at Milk & Honey in New York, most famously the Penicillin Cocktail: a smoky, spicy mix of Scotch, honey and ginger and lemon. We have deconstructed these ingredients from the cocktail and put them all together to brew a beer we have been wanting to make for a very long time. Dr Todd is our riff on the Penicillin cocktail. The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest. The Penicillin was inspired by the Hot Toddy, invented by the revered Dr Robert Bentley Todd.

Using this inspiration for our flavours we brought several Mexican ingredients to the brewhouse: Masa Canina; Pineapples; Demerara sugar; cinnamon and star anise.Tepache is a perfect balance of funky brett with a tart and zesty sourness and the blend of the sweet fruit and dry spice character. It is paired beautifully with Njdula tacos – where spicy sausage compliments the spices in the beer, refried beans are cut by the brisk acidity, whilst lime provides a contrast to the earthy, fermented pineapple character.

Yonder Loop - Perry Pear & Juniper Berry Yonder
Style : Saison ABV : 4.6% Bottle Size : 750ml Loop is a series of seasonal mixed fermentation beers, aged in oak and blended with a medley of seasonal, locally sourced farmed and foraged ingredients. The latest release in the series was fermented with Perry pear juice from Burrow Hill Cider Farm (Somerset Cider Brandy Company) on the Somerset levels, and infused with juniper berries, foraged in the Highlands of Scotland. The beer pours ultra pale with a pure white head of quickly subsiding foam. The high effervescence drives forward aromas of fruity and dry, farmyard cider. Whilst at the first sip, the gentle acidity balances those funky flavours against the subtle nuance of juniper. Made for sharing, but rules are made for breaking. Drink now or age in the bottle.
