Style : Lambic ABV : 9.1% Bottle Size : 750ml Bottling date: 19/01/21This Druif features the Muscaris variety, a crossing between Solaris and Muskateller. This rather young variety originates from the Freiburg region in Germany and combines an intense muscat bouquet with a higher sugar density than other Muscat varieties (especially when harvested slightly late).Anyhow, we put the grape must with fifteen-months old lambik on a small oak foeder. The lambikken that we used for blending, was a three-year old lambik (and makes up more than 10% of the total volume).The final fruit intensity is 469 grams of Muscaris grapes per litre of Druif. 100% 3 Fonteinen brewed lambik.
3 Fonteinen Druif/Kriek Dornfelder Season 20/21 Blend 26 3 Fonteinen
Style : Kriek ABV : 8.3% Bottle Size : 750ml Bottling date: 10/02/2021For this Druif/Kriek, we blended a Belgian dornfelder druivenlambik and a kriekenlambik in a 50/50 proportion. We used both young and two-year old lambikken, originating from nine different barrels and nine different brews. The combined maceration took eight months and the final fruit intensity is 510 grams per litre of sour cherries and freshly pressed, skin-macerated grape juice.

Style : Framboise ABV : 6.2% Bottle Size : 375ml This specific Framboos has a final fruit intensity of 310 grams of raspberries per litre of finished Framboos. The lambikken used come from three barrels and six different brews. We used a bit of our own lambik wort to start the fermentation in the bottle.

Style : Framboise ABV : 6.8% Bottle Size : 375ml For this Frambozenlambik, we macerated raspberries from Ferme Framboos for four months on jonge lambik at a fruit intensity of 382 grams of raspberries per litre of lambik. Lighter in colour due to the applied maceration technique, the raspberry characteristics in aroma and taste of this Frambozenlambik present themselves while opening up. We let this Frambozenlambik rest for almost 18 months before releasing it. 100% 3 Fonteinen.This is the first Frambozenlambik bottled on 37,5cl bottles.

Style : Dark Saison ABV : 7.0% Bottle Size : 440ml Can A dark farmhouse style saison, What's This? is the first beer we've ever made with gourds in the mashtun! These were joined by a complex malt bill, including three different varieties of rye for a spicy edge. Co-pitched with our house ale yeast alongside our brett blend, there's a good hit of acidity on the palate, as well as soft, fruity notes from the hundreds of fresh peaches which were added to finish.

All Day Blackberry & Elderflower All Day
Style : Wild Beer ABV : 5.3% Bottle Size : 750ml We brewed this back in May 2018, when the elderflower were in their prime. We went out and picked a load from the hedgerows around the brewery. We had some frozen blackberries from our pickings from the last Autumn, and thought that they would go together well. We used a pretty conventional base beer, and for once decided to try for a lighter beer. It went well, and we popped it into a barrel for secondary fermentation attention, and ageing. It’s a really nice, refreshing and quaffable ale, with a good level of carbonation.
All Day Chevallier #1 All Day
Style : Wild Beer ABV : 6.2% Bottle Size : 750ml Made with heritage Chevallier malt, our own brewery grown hops, and our mixed culture house blend of yeasts and bacteria. Barrel aged in a whisky barrel from October 2018 to July 2020, when we bottled this delightful beer in 750ml sharer bottles - although you are not obliged to share, you really ought to sip! It is very fruity, which balances extremely well with the tartness of the souring process it has undergone, It has a mid-level of carbonation

The Interrobang is an unconventional punctuation mark used in various .written languages and is intended to combine the functions of an exclamation point and a question mark. The artwork has been screen printed onto the label. Made with our own borehole water, our homegrown hops, elderflower and wormwood, local barley and wheat, and Norfolk blackberries, this punchy sour will make you exclaim in delight and question your existence!

Style : Wild Beer ABV : 5.4% Bottle Size : 750ml Another one of All Day's adventurous blended barrel aged beers. Three different beers were blended in a Bordeaux Barrel and aged for 9 months. 10kg of fresh Norfolk Blackberries were then added to the barrel to balance the puckering sourness with a juicy fruity finish.
All Day Strong Wheat Ale All Day
Style : Wild Beer ABV : 7.4% Bottle Size : 750ml Mixed Fermentation Barrel Aged. a 750 ml sharing bottle of a strong wheat ale, made with a 75% /25% wheat to malt grist, bittered with our own Fuggles hops, and fermented with our in-house cider-lees derived yeast, then barrel aged in a French oak red wine barrel for 12 months from June 2019, before being bottle conditioned. A very complex beer with tart, fruity notes and a smooth mouth feel, with a medium level of carbonation. It tastes nothing like a “conventional” wheat beer. This beer should continue to improve for several years.

Style : Flanders Red ABV : 6.2% Bottle Size : 330ml Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months.

But the story doesn’t end there - it builds in complexity, thanks to time spent in an oak foeder and the addition of grapes, which impart a refreshing character and color.

The beer was moved out of barrel and onto organic Driscoll Victoria blackberries (from Herefordshire) and organic Driscoll Maravilla raspberries (also Herefordshire) in separate tanks.We punched the fruit caps down daily once refermentation had commenced. The beer was on fruit for a total of 5 months before blending together. We blended 3 further components into the beer before packaging.ast!

The beer was on fruit for 2 months before being finished in freshly emptied red and white port barrels for 4 months. It was blended back with further components before packaging.

The beer was on fruit for 4 months before blending and packaging.

Style : Wild Ale ABV : 6.8% Bottle Size : 750ml Process: Golden ale brewed with malted barley and raw wheat. Spontaneously fermented and aged for 15 months in neutral french oak barrels. The beer was then moved onto frozen purple pershore plums from the 2020 harvest. The fruit was from Styan Family Produce in Worcestershire. We cold soaked the plums in tank for 7 days prior to adding beer for flavour and colour extraction. The beer remained on fruit for 2 months before returning to barrel for further maturation. Components from two other barrels were used in the final blend.Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on side and conditioned until release.Ingredients: Malted barley (pilsner), raw wheat, aged hops (whole leaf fuggles, whole lead Saaz & whole leaf strisselspalt), purple pershore plums, water.Brewing season: 2019/2020Fruit season: 2020

It is a blend of multiple barrels to create the balance we are aiming for. Bright, clean and acidic with notable lemon and hay aroma and flavour. This is the 2021 oak conditioned version of Simple Wheat Thing.

It was then refermented with delicious Rhubarb from nearby Primrose Vale, for 4 weeks. This is a beautiful balanced, nuanced and complex beer – rustic, earthy with a jammy rhubarb flavour and gentle acidity – superb!

Epochal Angle Trisector Epochal
Style : Table Beer ABV : 4.5% Bottle Size : 375ml A 4.5% Scottish table beer also brewed with Scotch Common but hopped with Ernest grown by Hukins Hops in Kent. Ernest was bred in the 1950’s (by a guy called Ernest, fantastically) but has an extraordinary intensity of fruit character more typical of very recently developed cultivars. The beer pours foamy pale gold with vibrant aromas of passionfruit, peach, gooseberry, white wine, white pepper and ripe melon. On the palate, the beer is light and crunchy with lively carbonation and lingering bitterness.
Epochal Blue Label Epochal
Style : Pale Ale ABV : 8.5% Bottle Size : 375ml Blue Label, a cozily, foamily amber 8.5% pale ale hopped with Cascade and Simcoe. The former, added to the boil, provides citrus fruits, pine resin, rosewater and an elegant bitterness. Simcoe, used primarily as the dry hop, offers notes of orange and passionfruit. Aging in ex-whisky casks on their third usage contributes a subtle, botanical oak leaf quality and the Brettanomyces adds layers of floral depth. Reminiscent of classic West Coast IPAs but with extra layers of funk and wood, it’s simultaneously cockle-warming and highly drinkable. Very delightful.
