Style : Framboise ABV : 5.8% Bottle Size : 750ml NOTE - THE BREWERY PUT THE WRONG FRONT LABEL ON, USING THE ONE FROM THE REGULAR HOMMAGE. THIS IS DEFINITELY THE BIO - THE BACK LABEL IS CORRECT! This particular Hommage Bio has macerated for 6 months and the final fruit intensity is 350 grams of fruit per litre. While blending, local honey was added. 3 Fonteinen Hommage Bio is the result of macerating hand-picked whole sour cherries and raspberries on young lambic for at least four months, in a proportion of 760 to 800 grams of raspberries and 200 to 240 grams of sour cherries per litre of lambic. This fruit lambic is then blended again with more lambic to obtain a minimum intensity of 35% fruit. Hommage is a bodied raspberry lambic beer, with an intense deep red forest fruit bouquet. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added.

Style : Kriek ABV : 6.3% Bottle Size : 375ml 3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!

Little Earth Project Folly Road (2018) Little Earth Project
Style : Sour ABV : 5.8% Bottle Size : 330ml While the name might give the impression the beer was possibly a mistake, or folly, the name actually originates from a road that runs near to the brewery of the same name. We used a new to us yeast in this batch, Saccharomyces Kudriavzevii, which is isolated from the bark of oak trees, alongside our own mixed culture to enhance the woody characteristics along with a stronger bitterness not often found in our beers due to the use of more of our locally grown hops. The beer was then aged for 5 months in a second use Rioja cask to round it out.

This year we took 4 barrels of sour saison and aged them separately on different fruits to be blended before packaging. First with plums, then damsons, then elderberries and the final barrel with wild hops. They were then blended together before bottling to create a rosy pink deliciously tart sour saison with a sharp fruitiness, rounded off by the earthy tones of the wild hops!

Little Earth Project Raspberry, Mint & Cocoa Nib Sour Little Earth Project
Style : Sour ABV : 5.4% Bottle Size : 750ml   We love experimenting with flavours so when we emptied a 500L Butt containing a cocoa nib sour, we decided to fill it with something that would compliment the flavours of this slightly chocolatey barrel. During the summer, we approached a local fruit farm to see what they had available and were pleased to find a load of raspberries that were too ripe to sell but perfect for us! We added more organic cocoa nibs and the flavour started to develop a clean sourness with a cocoa aroma. It was missing something though, a herbal note to act as seasoning and bring the beer together. Wild organic corn mint provided that glue. Foraged from our own field, it added a zesty but not overpowering, minty note.

Little Earth Project Stupid Sexy Bramling Cross Little Earth Project
Style : Flanders Red ABV : 6.3% Bottle Size : 750ml   Ever since we brewed our first batch of our Flanders Red inspired beer, we'd wondered what a dry hopped version would taste like. In September 2019 we had some freshly picked Bramling Cross hops that we'd grown ourselves. They smelled amazing - herbal with a burst of dark summer fruits. We added nearly all that year's harvest into a single barrel of 10 month old Stupid Sexy Suffolk. The result is incredibly funky, and quite sour red ale with a big hoppy aroma, and rounded fruity finish. This complex beer can be drunk fresh, but we believe the hoppy flavours will evolve and mellow over time, producing something possibly more special.

Little Earth Project Stupid Sexy Suffolk (Blend 2) Little Earth Project
Style : Flanders Red ABV : 6.5% Bottle Size : 330ml   We have a fascination with Flanders Red style beer and its links to brewing in the UK. We also love them. Sour, but with a rounded sweetness; complex, but effortlessly drinkable. We had to try and make an interpretation of our own. These beers are often described as the most wine like of all beers. We thought we’d run with this idea and try and produce a beer that has more in common with a Burgundy than a Bitter. We used large quantities of roasted malts, including roasted rye malt and mashed them warmer than usual. In the boil we added aged hops to give the beer a note of tannins. Finally the beer was aged in a freshly emptied French Red Wine barrels with our own mixed culture of wild yeast and bacteria. The result is a red coloured beer with tannins, spice, acidity, sweetness and a hint of oak and spice.

This collaboration brewed with Burnt Mill and Whiplash used a grist of 60% Wheat and 40% Pils malt and was soured with our house lactic culture. This beer had a subtle dose of coriander, a healthy amount of Irish sea salt to promote a smooth and round palate, and was dry-hopped with Sabro and Loral – it is tart, lemony and bright – bring on the sun!
