Style : Imperial Stout ABV : 11.0% Bottle Size : 440ml Can 10 different malts, 100kg of organic Tunisian Deglet Nour dates, 100+ Madagascan vanilla pods, Venezuelan cacao nibs, Mexican guajillo and chipotle chillies and a heap of organic cinnamon. No flavourings, extracts or essence. The Tower is a big thick stout. Warming and fruit forward Mexican chillies blend together with the freshly roasted Venezuelan cacao. All balanced off with organic cinnamon and Madagascan vanilla followed by a rich complex date sweetness. Fermented in open fermenters with a ester forward custom yeast blend.

Style : IPA ABV : 7.2% Bottle Size : 440ml Can Ridiculously fresh hazy IPA fermented with 4 super ester heavy yeast strains and then hopped with a lot new blaster hop Strata as well as a good bit of Citra and Nelson Sauvin. Aged on 60kg of fresh passionfruit. Passionfruit on the nose followed by heavy dank fruit hoppiness. No extract or essence and no oats.
Epochal Of Myces And Men Epochal
Style : Pale Ale ABV : 6.2% Bottle Size : 375ml Of Myces and Men is a 6.2% pale ale brewed with Maris Otter malt and lavished with Brook House Goldings and Fuggles throughout the boil. It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, it’s a thrilling expression of these classic hop varieties and of what happens when they’re combined with complex wood fermentation.

Style : Porter ABV : 6.2% Bottle Size : 375ml Glasgow Light Porter In this beer, we revive an old Glaswegian approach to porter brewing, drawing on the writings of Glasgow brewer, engineer, inventor and politician, James Steel. His distinctive style favoured the softer amber malt over the darker brown malt used by London brewers, and his final blends contained a greater proportion of fully attenuated mature beer than was otherwise common. The result combines biscuit-like roast, fruit-forward funk and a highly drinkable lightness on the palate. This beer is the first in a series of beers inspired by Steel's work and is based on his recipe for what he called 'light porter', the lightest of his export beers, brewed for sale to the West Indies and Nova Scotia.

This beer features large quantities of charred and roasted malts, balanced by layers of dark crystal malts and a touch of smoke. Fermented with classic workhouse British ale yeast.
Holy Goat Gnosis Holy Goat
Style : Saison ABV : 7.4% Bottle Size : 375ml Gnosis is inspired by Saison brewing traditions from Belgium. Brewed using locally harvested, barley, wheat and oats, and hopped in the kettle with aged Scottish First Gold. We fermented this for 4 months, using a blend of Belgian Saison yeast strains, Brettanomyces and a mix of microbes cultured from spontaneous beers. Gnosis was dry-hopped with whole leaf First Gold hops, along with bitter orange peel and the zest, flesh and juice of green bergamot. The bergamot citrus was harvested whilst still green and unripe, as this is when its oils and aromatics are at their most punchy.

Style : Scotch Ale ABV : 7.2% Bottle Size : 330ml Ageing a robust Scottish Export with wild yeast evolves this humble and too-often overlooked style into a deeper and more complex experience. Layers of malty sweetness are gently deconstructed and enhanced by the brettanomyces over the course of a year to create a truly exceptional and refined beer. Pours dark amber/mahogany in colour with a persistent off white head and good lacing. The aroma is fruity funk with clear wild ferment aromatics; raisins soaked in sherry, sour cherries, blue cheese, earthy in a refined, floral way. There’s an underlying smooth malt sweetness, as you’d expect in an Export, but chocolate, caramel and toffee flavours are now part of a much broader flavour spectrum.
