No flavourings, extracts or essence.  The Tower is a big thick stout. Warming and fruit forward Mexican chillies blend together with the freshly roasted Venezuelan cacao. All balanced off with organic cinnamon and Madagascan vanilla followed by a rich complex date sweetness. Fermented in open fermenters with a ester forward custom yeast blend.

Style : IPA ABV : 7.2% Bottle Size : 440ml Can   Ridiculously fresh hazy IPA fermented with 4 super ester heavy yeast strains and then hopped with a lot new blaster hop Strata as well as a good bit of Citra and Nelson Sauvin. Aged on 60kg of fresh passionfruit. Passionfruit on the nose followed by heavy dank fruit hoppiness. No extract or essence and no oats.

Epochal Angle Trisector Epochal
Style : Table Beer ABV : 4.5% Bottle Size : 375ml   A 4.5% Scottish table beer also brewed with Scotch Common but hopped with Ernest grown by Hukins Hops in Kent. Ernest was bred in the 1950’s (by a guy called Ernest, fantastically) but has an extraordinary intensity of fruit character more typical of very recently developed cultivars. The beer pours foamy pale gold with vibrant aromas of passionfruit, peach, gooseberry, white wine, white pepper and ripe melon. On the palate, the beer is light and crunchy with lively carbonation and lingering bitterness.

Epochal Blue Label Epochal
Style : Pale Ale ABV : 8.5% Bottle Size : 375ml   Blue Label, a cozily, foamily amber 8.5% pale ale hopped with Cascade and Simcoe. The former, added to the boil, provides citrus fruits, pine resin, rosewater and an elegant bitterness. Simcoe, used primarily as the dry hop, offers notes of orange and passionfruit. Aging in ex-whisky casks on their third usage contributes a subtle, botanical oak leaf quality and the Brettanomyces adds layers of floral depth. Reminiscent of classic West Coast IPAs but with extra layers of funk and wood, it’s simultaneously cockle-warming and highly drinkable. Very delightful.

Epochal Of Myces And Men Epochal
Style : Pale Ale ABV : 6.2% Bottle Size : 375ml   Of Myces and Men is a 6.2% pale ale brewed with Maris Otter malt and lavished with Brook House Goldings and Fuggles throughout the boil. It was open fermented with our house culture before a secondary fermentation with many more Goldings and Fuggles in barrels chosen for their expressively funky fermentation character. Finally, blended with fresh beer and refermented in the bottle, a special beer emerges. The aroma is musky, spicy, flecked with petals of peony and ripe pears. The palate is full but light and with a rich, chewily complex bitterness. To me, it’s a thrilling expression of these classic hop varieties and of what happens when they’re combined with complex wood fermentation.

Epochal Squarer Of Circles Epochal
Style : Table Beer ABV : 3.6% Bottle Size : 375ml   A 3.6% Scottish table beer brewed with Scotch Common, a very old landrace Scottish barley used in beer and whisky production between the late 17th Centuries. It was grown and malted by Crafty Maltsters in Fife and possesses a subtly honeyish spicy sweetness. It’s also hopped with UK Cascade and Bramling Cross from Brook House Hops in Herefordshire. Open fermentation with house Saccharomyces was followed by wood fermentation with Brettanomyces and finally bottle fermentation with both. It pours extra pale with loads of foam and aromas of heather honey, fresh cut guava, bramble cream, coconut and pear sherbet. Light bodied, bitter and refreshing. So much character for such a little beer.

Holy Goat Blood Witch Holy Goat
Style : Oud Bruin ABV : 7.2% Bottle Size : 375ml Our version of Oud Bruin is primary fermented with a Brettanomyces forward mixed culture, and blended from two different batches with an average age of 4 months. We incorporated our favourite rye, crystal and light roasted malts in addition to Brewers Invert Sugar No. 2 – a specialist sugar used historically in the UK and Belgium in dark, strong ales providing unique caramel/treacle flavours. We then refermented this blended Oud Bruin on 150g/l Scottish strawberries, sourced from farms located within 60 miles of the brewery.

Holy Goat Citrus Crusher Winter Harvest 2021 Holy Goat
Style : Sour ABV : 6.2% Bottle Size : 375ml We brewed this golden sour with a heritage malt called Scotch Common, grown and malted by Crafty Maltsters in Auchtermuchty, Fife. Fermented with a mixed culture and aged for around three months, before being transferred onto 250l of blood orange and clementine juice, with an additional 50kg of whole fruit, which were zested, pulped, and juiced by hand. These citrus fruits were freshly picked from the winter harvest of Italian organic producers (Cooperativa I Fruitti del Sole & Oroverde).

Style : Sour ABV : 6.8% Bottle Size : 375ml Brewed with Scottish malted barley, raw wheat, and rolled oats, this base beer was fermented with a Brettanomyces strain isolated from a renowned Belgian Trappist brewery.   A new strain for us, we are enjoying its stone fruit characteristics, light body, and subtle yet growing funk.   We lightly dry-hopped this beer with Mosaic and Galaxy hop terpenes (isolated aromatic hop compounds), adding some nuance to the aroma.

Style : Sour ABV : 7.2% Bottle Size : 375ml Sunslayer is an unhopped raw golden ale, brewed with local barley, wheat and rye. Raw beer describes the primarily historic practice of brewing beer without boiling the wort. this can create interesting nuance, providing a fresher, deeper malt character. We fermented this raw ale with a blend of Brettanomyces strains, along with our house culture of yeast and bacteria for 3 months. The beer was subsequently blended (80/20) with a 2-year-old golden sour ale, aged in wine barrels. this blend was then refermented with 200g/l of Spanish apricots and Tanzanian vanilla. the resultant beer has intense stone fruit, along with a delicate but growing funk.

Style : Sour ABV : 6.0% Bottle Size : 375ml This golden sour was fermented with one of our favourite Brettanomyces cultures – fermented extra warm at 30°C+ to push its ester production to the max, producing ripe tropical fruit flavours. Using the yeast’s flavour profile as a guide and inspiration, we transferred the base beer onto the leftover peaches and lees of our previous golden sour – Unicorn Wizard, along with a large addition of passionfruit and mango. The resultant beer represents our most heavily fruited offering to date, and provides a complex, pungent tsunami of tropical flavour.

Pouring a very dark brown with a crema-coloured foam lacing the sides of the glass there’s a gentle hoppy freshness in the aroma from a dose of Summit hops late in the boil, and this is picked up on the palate too, adding a refreshing modern touch to the classic roasty profile from the blend of malted grains. A helping of oats, low carbonation and a high finishing gravity provide a smooth mouthfeel and satisfying body.

Light blonde in colour and pouring with gentle carbonation, the aroma is a delicate blend of floral, strawberry-mango candy, mellow Belgian yeast esters and refined malt character. The Exale and STF brewers have rounded out the fruity sweetness with notes of citrus and white pepper; the finish is dry and slightly herbal with a subtle lingering bitterness.
