Wild Beer Dr Todd 2019 Wild Beer
Style : Sour ABV : 9.7% Bottle Size : 330ml Dr Todd. A beer inspired by a cocktail. Australian bartender Sam Ross created several enduring drink recipes whilst at Milk & Honey in New York, most famously the Penicillin Cocktail: a smoky, spicy mix of Scotch, honey and ginger and lemon. We have deconstructed these ingredients from the cocktail and put them all together to brew a beer we have been wanting to make for a very long time. Dr Todd is our riff on the Penicillin cocktail. The end result is an Islay Whisky Barrel-aged, strong citrus sour. It’s been brewed with ginger, some lactose sugar and aged in barrels with British Black Bee honey and finished with more ginger and lemon zest. The Penicillin was inspired by the Hot Toddy, invented by the revered Dr Robert Bentley Todd.

Wild Beer Evolver IPA Wild Beer
Style : Bretted IPA ABV : 5.8% Bottle Size : 330ml An IPA brewed with Brettanomyces yeast. Fresh it tastes phenomenal, but give it six months or more and the brett will really take hold. Definitely a beer worth buying two - one for now, one for later!

Wild Beer Redwood 2017 Wild Beer
Style : Sour Fruit Beer ABV : 5.7% Bottle Size : 330ml The Redwood Project began in 2013 when we foraged the late summer fruits from hedgerows and farms around the brewery. These were then put into red wine barrels where they rested for a full year with some of our wildest beer before being packaged. The first Redwood was released late in 2014 as an Autumnal foraged fruit beer. Redwood will vary year on year based on the forgeable fruits available (heavy on damsons and plums this year) and the barrels selected for the final beer by our blending team. The mixture of berries and barrels culminates in a crescendo of sweet fruits, roasted oak and vibrant acidity. Drinking Redwood 2017 is like walking through the vibrant fallen leaves, your breath fogging in front of you while you pick the last of the season’s plums with the whiff of bonfires in the air.
Wild Beer Smoke n' Barrels Wild Beer
Style : Smoked Gose ABV : 4.0% Bottle Size : 330ml We have brewed a barrel aged, smoked orange gose. The base beer, containing smoked malt, developed in barrels over many months, quietly gaining acidity and complexity. We then introduced home-smoked Cornish sea salt and smoked orange segments.The resulting beer is full of juicy zestiness and mouthwatering acidity while the smoked sea salt provides a decadent mouth feel and salinity. Refreshing and complex in the same mouthful the vibrancy of the citrus contrasts the delicate sweet smoke from both cherry wood and oak.

Wild Beer x To Øl Trøffeler Wild Beer
Style : Saison ABV : 5.5% Bottle Size : 330ml Trøffeler is our debut collaboration with Denmark’s To Øl collective. Teaming up to make a Barrel-Age Saison made from a base of white spring Tuscany Truffles and Sage. Ithas been blended in Sauterne casks to add a sweet characteristic while still letting the yeast funk up the beer. We used foraged truffles from the Alba in Northern Italy, continuing our linage in using only the finest ingredients in our beers.Based on our shared passion for pushing borders and using untraditional mixes of ingredients to make new and interesting takes on existing styles, this collaboration is uses a philosophy of balanced playfulness!
