All the way from those halcyon Loka Polly days, to the insane IPA we brewed for the Little Summer Beer Bash in 2018, right the way through to the Augment range and beyond, we always fall back to this combo because it's just so darn good. Sweet pineapple notes are prominent, with underlying flavours of mango, orange sherbert, and just the faintest little bit of pithy bitterness. With the sun now starting to peek its head out, we're letting everybody know with this beer that summer is definitely on the way

Style : Double India Pale Ale ABV : 8.0% Bottle Size : 440ml Can   We’ve developed a real taste for going big here at Polly’s HQ, and we’re sating our taste once again with Amateur Dance. Our owner Sean has taken the lead on this one, employing his pyramid dry-hopping technique to full effect in this maxed out, full on DDH DIPA. Mosaic is the dominant hop varietal with a huge 30kg added, before progressively smaller additions of El Dorado and Simcoe accentuate and give this beer multiple levels of depth. Named in honour of his soundtrack for when he works into the small hours to ensure our brewers have as stress free a brew day as possible, this huge beer absolutely drips with dank, stonefruit, mango and pineapple notes, before being reeled back in by a hearty pine finish for balance.

Style : Barleywine ABV : 8.2% Bottle Size : 440ml Can   Okay, so Polly's have thrown a curveball by releasing a Best Bitter last week, where on earth will they go next? Turbo-best, that's where. A style that we've always looked at from afar with starry eyes, it caught us off guard when our very own Lally told us he'd already brewed a couple back in his Mad Hatter days. Fast tracking it into our brew plans as quickly as possible to take advantage of the slightly cooler temperatures of February and early March, the result is An Upfront Wither. An American style barleywine; we've taken inspiration from the OG Stateside brewers generously hopped this beer with Centennial to add a distinct grassy bitterness to pair off against the sweet dried fruit notes brought to the table by the malt bill. Best enjoyed (in our opinion anyway) in a big snifter glass in front of a fire, this beer is another push for us to really expand what we're capable of as a brewery.

Style : Pale Ale ABV : 5.1% Bottle Size : 440ml Can   Does anyone else feel like we’ve been here before? The pandemic might be doing its absolute best to deny us the simple pleasure of the pub, but we’re soldiering on with our pale ales; creating a beer to specifically hark back to memories of silly, silly evenings with mates, sharing a bag of crisps, terrible, terrible jokes, and pints pints, and more pints. Big Feat is a pale ale designed with maximum drinkability in mind – a hop bill of Citra, Mosaic and Bru-1 bringing the juice to the max, but with plenty of crisp bitterness to keep everything in check. Mosaic and Bru-1 are representing team juice here, with big overripe mango, tangerine, and berries playing off the pithy citrus bitterness brought to the party by Citra.

Team sales' favourite! Every Piece Matters is a beer we keep coming back to so often because our raven-haired head of sales loves selling it so much - the simple but mega effective hop bill of Citra and Mosaic being a combination that has followed us from those halcyon Loka Polly days right up to now. In tribute of one of our in-house favourites, it only seemed a natural progression to let it join the amped-up TIPA club and DDH Every Piece Matters is the result. Positively dripping with tangerine, peach, and passionfruit notes, with just a little bit of grapefruit to back things up, we've pulled every little bit of flavour we possibly can into this beer. Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   As we mentioned in our last team-designed beer with Yellow Blaze, we love that being part of Team Polly's is more like being part of a big brewery family. Our second in this series is the shortest collaboration beer we've ever done - brewhouse meets office with Endless Festoon, designed by our own Head of Sales, Arron. A big fan of melding all things old school and new school into a smashed up hybrid, this beer features a tag team of new school hops in Azacca and El Dorado taking on old school stalwarts Citra and Enigma for a beer that pays homage to those OG beers without whom we wouldn't be here today, whilst fully embracing the new school juicebomb vibe we've become so famous for. Stonefruits, tangerine and piney resin notes are about in this all out smasher of a DDH Pale.

Style : India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   We confess to being big music heads here at Polly's HQ, with a huge spectrum of styles appreciated brewery-wide. Whether it's a "Champagne Supernova", a "Killing in the Name", or an "Orange Crush", there's just something that's always stuck in our minds about how uniquely memorable a repeated first verse is. We wanted to apply this concept to a beer, and First Verse, Twice was born. Featuring a first verse of El Dorado in the boil, we added a healthy chorus of Mosaic and Simcoe during fermentation, before coming back for another go around on El Dorado once again in the dry-hop. The result is a juicebomb of a beer, positively dripping with notes of tangerine, jelly tots (yes, really) and red grapefruit for balance. An all out explosion of flavour; Team Polly's doing what we do best

Polly's Brew Co Hold Fast Drifting Polly's Brew Co
Style : IPA ABV : 6.2% Bottle Size : 440ml Can   It could be said that we’re full on Idaho 7 converts here at Polly’s HQ. A varietal that we embraced to the max when we first got out hands on a small amount, it seemed to fall off our radar for a short time before roaring back to prominence in 2021; the latest crop being absolutely something else, and a bonafide favourite with our brewers whenever it lands on our brew plans. With Hold Fast Drifting, we wanted to make a special tribute to this incredible varietal – utilizing not only T90 pellets, but a newly acquired Cryo hop version to boot. The result is an IPA that is positively dripping with fresh cut pineapple notes, with apricot, papaya and red grapefruit to round off the tropical punchbowl of flavour. With finishing notes of black tea and pungent pine notes aplenty, this is a full on Polly’s banger of an IPA.

Style : India Pale Ale ABV : 7.2% Bottle Size : 440ml Can   In the same way we're actively embracing styles we're not necessarily known for in 2021 here at Polly's HQ, we're firm believers that at no point should we be resting on our laurels with our pale and hoppy beers, and the next one should always be better than the last. Holy Ghost Love is a continuation of our opinion that our beers keep gradually improving the more we learn and become in sync with our new brewkit. We've opted for a mammoth 50kg of Simcoe, Galaxy and Simcoe in the dry hop to impart a metric tonne of mango, pineapple and nectarine notes up front, before being reeled back in with a light spritzy bitterness from our use of Simcoe on brew day. All wrapped up in our bespoke LA3 strain, this beer is thick, pulpy, juicy, and 100% Polly's. Awesome.

Polly's Brew Co Huskle BBE 15/10/21 Polly's Brew Co
Style : Double India Pale Ale ABV : 8.5% Bottle Size : 440ml Can   In our humble opinion, we think we've really nailed Sabro as a hop varietal here at Polly's HQ. As a mega hype hop, it's super easy to tip the scale in the wrong direction with this incredibly potent varietal by using way too much, and our brewers have really taken to getting that fine line perfectly balanced. Huskle is an experiment into going heavy on the old school hops, and letting exactly half the amount of Sabro take the reins for the new school juice column. Featuring equal parts 20kg each of Centennial and Chinook, this beer has all the grassy, piney bitter notes we love about those old school beers, before a 20kg Sabro dry-hop charge jumps in with those incredible coconut, mint, and lime flavours. I think it's safe to say, Sabro - we absolutely love you.

Style : Berliner Weisse ABV : 4.6% Bottle Size : 440ml Can   We were delighted to take part in this year's International Women's Collaboration Brew Day here at Polly's; with Amber Dernulc of Queer Brewing coming down to the brewery to help with the recipe design, name, and actual brewing of the beer itself. In Totu - a play on in toto, literally "togetherness" or "as one", is our beer brewed to this year's theme of compassion. A bold, vibrant, and awesome looking bright pink take on the Berliner Weisse style; we loaded this with locally sourced rose water and hibiscus to create a tart, but equally sweet beer that reminds us just why we love collaborating and sharing ideas with other people here at the brewery.

Every Piece Matters is an undoubted darling of our Augment range, and we wanted to show just how much we love this incredible beer by bringing the ABV right down to a palatable 5%, whilst maintaining everything that made it so incredible in the first place. Our classic mash of extra pale, oats and wheat provides a solid base before that unparalleled dry hop bill of Citra and Mosaic unleash a full on juice explosion with a metric tonne of mango, passionfruit and papaya notes, before being reeled back in with our whirlpool addition of both providing an earthy bitterness to finish.

Style : Pale Ale ABV : 5.4% Bottle Size : 440ml Can   We'll admit it, we've been hitting it pretty hard with the ABVs lately. Now that the weather is perking up just a little bit, we find there's nothing better (at least until the pubs open in Wales anyway) than spending an afternoon in the park with some - socially distanced of course - mates, and a cooler full of tinnies for good times and laughs. Lost Again is a beer specifically designed just for this sole purpose - hazy but not opaque, juicy but not overwhelming, full of mouthfeel but not soupy. Featuring a reeled back, chilled out, Amarillo, Citra and Mosaic hop bill, this beer ticks all the typical Polly's boxes; with tropical notes a-plenty, but with a pleasant spiky bitterness to keep everything in check. A sign that summer is just around the corner, and normality with it.

Polly's Brew Co Murmurations BBE 26/2/21 Polly's Brew Co
Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   After a short period of fallow time, our in-house DDH Pale series returns once again, with Murmurations headed up by our second ever employee at the brewery, our very own Scott. Taking the reins entirely from recipe to artwork, Murmurations features a technique employed by Scott known as “hop bursting”; multi-layering the whirlpool hops to accentuate his dry hop bill of Mosaic, Simcoe, Azacca and Enigma. Gradually adding a small amount of Mosaic at 100 degrees, before dropping the whirlpool down to 87 degrees and adding his main whirlpool addition of Simcoe, the result is that each individual varietal is distinguishable throughout – possibly our most crushable DDH Pale yet.

Polly's Brew Co Now Here No Where Polly's Brew Co
Style :  Pale Ale ABV : 5.6% Bottle Size : 440ml Can   Vic Secret is a varietal that we feel doesn't get nearly enough love these days. Pushed out of the way by its more aggressive contemporary Galaxy, we find that this incredible Australian hop has a lot of similarities to its countrymate, but in a much more balanced, easygoing way. We decided to put this thought process into practice with Now Here, No Where - amplifying up the hop bill to that of one of our standard IPAs, whilst keeping things at a relatively sessionable strength. The result is a pale ale that is positively bursting at the seams with pungent tropical pineapple notes. Keeping everything in check with a healthy lashing of in-house favourite Citra, this is a beer perfect for those lockdown Zoom quizzes and Skype pub meetups.

Style : India Pale Ale ABV : 6.6% Bottle Size : 440ml Can   The underrated dark horse of the original Augment trio is back once again! Patternist gained a massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite amongst the staff here at Polly's, and in the brew team's opinion, the best version to date, expect all kinds of high juice and low bitterness notes bursting from this incredible IPA.

Style :  India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   A fabled story we love to tell about how we're constantly learning; when we were working with our amazing pals at North Brewing Co last year, we were astounded at how little whirlpool hops they added in the first stage of the brewing process. Imparting less bitterness is something we've been keen to explore in our beers, and we achieved this through bringing the whirlpool temp down, and whirlpooling for much less time and adding smaller additions of Enigma and Mosaic, meaning more hops for dry-hopping! Almost 40kg of Galaxy, Mosaic, and Simcoe ended up going into this beer during fermentation, and the results stand for themselves. An absolute juice bomb of a beer, and a marked improvement on version one of this amazing beer.

Style : Imperial Sour ABV : 7.0% Bottle Size : 440ml Can   If 2019 was all about polishing the edges we established in our first year, and 2020 was about cementing where we think our pale and hoppy beers should be in terms of quality and technique, then 2021 - our fourth year as an active brewery - is where we start to branch out from our usual comfort zone a little more and brew more styles that help us grow and learn as a team. Plant Sugar treads familiar territory, but amplifies it up to the max for our biggest sour beer to date. The brew plans for this beer simply read "Rhubarb & Quince = LOADS", and boy did we take that one seriously. These awesome fruits meld together for a wonderful jammy tartness, before mellowing back around with a kick of sea salt to keep things interesting. Roll on 2021!

Simplify the Manifest is our latest entry into this hybridized new/old school style, with a hop lineup of Chinook for pithy grapefruit, pine and resin notes playing off a tonne of mango, passionfruit and tangerine notes from new school stalwart, Mosaic. A pale ale perfect for good times, and smashing with pals (in socially distant groups of less than six, please).

Style : India Pale Ale ABV : 7.0% Bottle Size : 440ml Can   We've always had a thing here at the brewery for those big, brash IPAs north of 7% brewed by those old school brewers that we grew up drinking. Those base flavours from the malts, accentuated by the flavour profiles brought to the table by the hops, they all come together as the strength heads into the upper echelons of IPA territory. As a brewery that firmly embraces the past in our brewing style, we've employed our pyramid dry-hopping technique here with a heavy dose of the present in Azacca, before a nod to the past with a smaller but still healthy addition of Chinook, finishing with an eye on the future with a further small addition of Sabro. Expect tropical juice to meld with pina colada sweetness before finishing out with piney bitterness in this all out smasher of an IPA.

Style : IPA ABV : 5.9% Bottle Size : 440ml Can   We've said it once and we'll say it again, we love paying homage to the OGs of brewing - the brewers who produced the beers without which we wouldn't be here today. This rings true for wanting to pay homage to the classic IPAs - slightly weaker in strength than our usual 6%+ fare, but retaining all that incredible flavour profile, body, and mouthfeel of what we do best. The Altar Supreme is our take on those classic IPAs - coming in at a more reasonable 5.9% but supercharged with 30kg of El Dorado and Vic Secret for all those new school notes. A beer that brings all those juicy, candied orange, stone fruit, and mango notes we're so famous for to the party initially, but backed up with a delicious resinous bitterness for complete balance.

Style : Berliner Weisse ABV : 4.6% Bottle Size : 440ml Can   We're all about those big Summer vibes here at Polly's HQ. The chief himself, head brewer Lally set himself a goal of creating a sour beer without a lactic acid sour bacteria pitch, perfect for grabbing cold from the fridge on a hot summer's day. The result is The Butterfly Effect - a Sabro-hopped beer in the Berliner Weisse style, naturally soured with lime. Going big on the wheat on the grist bill, this beer has a super crisp and clean body, with just a hint of haze to boot, but it's the flavour profile is where this beer really comes to life though - the tropical pina colada, coconut and mint notes of this incredible stateside varietal play off the dry sourness of the lime perfectly, creating a sweet and sour fiesta of flavour in what might be our most accessible sour beer yet.

Style : India Pale Ale ABV : 6.2% Bottle Size : 440ml Can   The original version of The Feels seems so long ago at this point - what was then a big jump into adding lactose into our beers; we followed it up with the incredibly popular Vol.2, an exclusively NZ hopped version, before making lactose additions a semi-regular feature of our output. For this newest version of the OG Polly's lactose IPA, we're going Stateside with a full on lineup of the best hop varietals the US has to offer in Citra, Mosaic, Simcoe and Azacca. A massive amount of juicy pineapple, passionfruit, and orange notes from Azacca and Simcoe meld together with blueberry, mango and grapefruit notes from dependable duo Citra and Mosaic, backed up with an ultra smooth mouthfeel from the generous use of oats in the mash and lactose in the boil.

Style : India Pale Ale ABV : 6.3% Bottle Size : 440ml Can   Back for its fourth iteration, The original version of The Feels was our ongoing quest to hit that mouthfeel of the American haze craze brewers that inspire each and every one of our beers. By adding lactose, and upping the oats in the mash to a quarter of the total grain bill, we felt we had achieved our goal, but regrettably at the expense of keeping our beers vegan friendly. The latest version of this beer throws lactose out of the window completely, upping the oats to a third of the total mash, but retaining that "fluffiness" that is such a signature characteristic of those incredible American breweries that inspire us so much. Utilizing Mosaic and Sabro in the dry-hop just completely accentuates what we're going for with this beer; with Mosaic bringing juicy mango, pineapple and tangerine notes to play off the pina colada vibes of Sabro, which also brings its signature opacity to the party the way only Sabro can. Awesome.

Utilizing Azacca, Mosaic, El Dorado and Simcoe in our pyramid dry hopping technique, with a ten minute eighty degree whirlpool addition of Vic Secret and El Dorado, all wrapped up in our bespoke, custom designed LA3 yeast strain, this beer shouts for everything modern when it comes to UK brewing

Often getting lost amongst their bigger, brasher IPA and DIPA siblings, we really dig that we can pull all the flavour out of one of our bigger beers and drop it into a more sessionable strength. Trouble on Central, named for a track on our owner's chilled beats playlist for when he's designing our can labels, perfectly encapsulates everything we love about these suped-up, mega hoppy sessionable beers. Featuring an all-US hop bill of Mosaic in the whirlpool for just a hint of bitterness, and even more Mosaic, Simcoe and Amarillo in the dry hop, this is a beer that bursts with juicy tangerine, bubblegum and passionfruit a-plenty, all reeled back to an easygoing 5.5%. Perfect for the brighter weather on the horizon.

Style : India Pale Ale ABV : 6.6% Bottle Size : 440ml Can   It's back for a second run around! Originally brewed as a celebration of being able to branch out from the rigidity of the two-hop combos of the Originals Range, Who Knew was a beer that gained cult status amongst our fans and staff alike. It's no surprise that when we received a delivery of the freshest Galaxy hops in February, we immediately went into the cold store to see if we had any Citra and Mosaic to back up one of the most sought-after hop varietals in the world. Employing our pyramid dry-hopping technique to full effect on this beer, with Citra taking the lead before smaller additions of Galaxy and finally Mosaic, expect a tropical explosion of flavour from this beer, with ripe stonefruits, mango and passionfruit a-plenty, all wrapped up in that amazing LA3 juicebomb vibe.

Style : Pale Ale ABV : 5.8% Bottle Size : 440ml Can   It's back! Our final collaboration before lockdown with our super pals over at Big Mountain Brewing, and one that has slowly turned into a surefire cult favourite since makes its triumphant return to our lineup. We've experimented with ramping this beer up to DIPA strength, but in our opinion, nothing beats the wonderful complexity of the original version. Originally our first foray into using everybody's new favourite hype hop Sabro in one of our beers, version three sees us with an extra twelve months worth of experience in the little quirks and idiosyncrasies of this incredible varietal. Amplified up to the max, Sabro brings a metric tonne of sweet, creamy, pineapple and coconut notes before being reeled in by an in-house Polly's favourite in Citra to keep everything balanced. Named for a truly terrible George Takei impression in the brewery, a beer that will truly make you say "...Oh my!"
