Polly's Brew Co A Late Summer Polly's Brew Co
Style : Pale Ale ABV : 5.6% Bottle Size : 440ml Can   As we’re gradually edging closer and closer toward a core range finally dropping, we wanted to make a little end of summer showcase to some of our favourite hops of 2021 in a series that we hope will become a yearly release every August. After coming firmly to our attention last year, the freshest crop of Bru-1 we’ve been able to get our hands on this year is just next level. Positively bursting with freshly cut pineapple chunks, this beer is absolutely bursting at the seams with high tropical and low bitterness juice. Sweet, but not cloying, and full bodied, but not thick; this is a hop varietal perfectly suited to the lower strength smashability of a pale ale. Wrapped up in our bespoke in-house strain of LA3, our Late Summer is off to a blinder.

Polly's Brew Co A Little Bit Of Fear Polly's Brew Co
Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   Mosaic and Simcoe is a combination that has followed us from near enough the very beginning of this humble little North Walian brewery. All the way from those halcyon Loka Polly days, to the insane IPA we brewed for the Little Summer Beer Bash in 2018, right the way through to the Augment range and beyond, we always fall back to this combo because it's just so darn good. Sweet pineapple notes are prominent, with underlying flavours of mango, orange sherbert, and just the faintest little bit of pithy bitterness. With the sun now starting to peek its head out, we're letting everybody know with this beer that summer is definitely on the way

Polly's Brew Co Amateur Dance BBE 13/5/21 Polly's Brew Co
Style : Double India Pale Ale ABV : 8.0% Bottle Size : 440ml Can   We’ve developed a real taste for going big here at Polly’s HQ, and we’re sating our taste once again with Amateur Dance. Our owner Sean has taken the lead on this one, employing his pyramid dry-hopping technique to full effect in this maxed out, full on DDH DIPA. Mosaic is the dominant hop varietal with a huge 30kg added, before progressively smaller additions of El Dorado and Simcoe accentuate and give this beer multiple levels of depth. Named in honour of his soundtrack for when he works into the small hours to ensure our brewers have as stress free a brew day as possible, this huge beer absolutely drips with dank, stonefruit, mango and pineapple notes, before being reeled back in by a hearty pine finish for balance.

Polly's Brew Co An Unfront Wither Polly's Brew Co
Style : Barleywine ABV : 8.2% Bottle Size : 440ml Can   Okay, so Polly's have thrown a curveball by releasing a Best Bitter last week, where on earth will they go next? Turbo-best, that's where. A style that we've always looked at from afar with starry eyes, it caught us off guard when our very own Lally told us he'd already brewed a couple back in his Mad Hatter days. Fast tracking it into our brew plans as quickly as possible to take advantage of the slightly cooler temperatures of February and early March, the result is An Upfront Wither. An American style barleywine; we've taken inspiration from the OG Stateside brewers generously hopped this beer with Centennial to add a distinct grassy bitterness to pair off against the sweet dried fruit notes brought to the table by the malt bill. Best enjoyed (in our opinion anyway) in a big snifter glass in front of a fire, this beer is another push for us to really expand what we're capable of as a brewery.

Polly's Brew Co Angel Feed Polly's Brew Co
Style : India Pale Ale ABV : 6.0% Bottle Size : 440ml Can   All hail the Fog! We were so impressed with our first London Fog fermented beer, Dream Mate, that we've gone all out; cropping and cultivating our own bespoke strain unique to Polly's. First to follow up on this beer is Angel Feed - a straight up, no nonsense IPA; basically our brewers at Polly's doing what Polly's do best. Bringing in a Polly's stalwart in Mosaic to lead things, we've added Loral into the dry hop charge to take the complexity up a level. A so-called "Super-noble" hop, it has all those noble characteristics of those classic hops - floral, peppery and herbal, but with some ultra new school lemon, citrus and dark fruit notes to boot. The result? An IPA bursting with all those typical Polly's characteristics. Awesome.

Polly's Brew Co Bubble Dream Polly's Brew Co
Style : India Pale Ale ABV : 6.2% Bottle Size : 440ml Can   A lockdown 1.0 favourite returns for another run around! We first brewed Bubble Dream back in those scary first couple of weeks of lockdown, when we’d battened down the hatches, everything was still incredibly uncertain and we were just brewing as much as we could to keep the brewery ticking over. A strong contender for the new in-house favourite IPA when we first produced it, and a stance that still rings true today; this beer set about smashing everything together that we love about modern day brewing. Chinook brings an old school resinous bite underlying the new school juicebomb notes from our ever dependable pairing of Azacca and Mosaic. Silky, hazy, and juiced out to the max; this is an IPA that cascades along the palate like the dream it references.

Polly's Brew Co Cause And Effect Polly's Brew Co
Style : IPA ABV : 6.5% Bottle Size : 440ml Can   An aptly named beer for the times we're currently living in - the country is going through some dark times at the moment, so we're going to plough on brewing the best beer we possibly can to bring a little bit of light. Cause & Effect is team Polly's doing exactly what we know how to do best - hazy, juicy IPA, with a characteristic Polly's bite for good measure. A healthy dry hop bill of El Dorado and Mosaic harkens back to a combination we've visited countless times and is always a surefire winner, Cause & Effect bursts with super ripe tangerine, mango and pine notes, playing perfectly off the pear, watermelon and stone fruit flavours brought to the table by El Dorado. Hops, haze, juice, no substitutes!

Polly's Brew Co Controversy Between Deep Polly's Brew Co
Style : Triple India Pale Ale ABV : 10.0% Bottle Size : 440ml Can   We feel like our TIPA game is really coming on leaps and bounds at Polly's HQ. A style that scared us half to death before we got our hands on it has now become almost second nature to us, and we feel is improving with each subsequent brew. Controversy Between Deep takes all the techniques we've employed to previous TIPAs and notches it up a level thanks to our use of a blend of our bespoke LA3 strain along with Nottingham Ale yeast. Nottingham does the heavy lifting, bringing the ABV comfortably up to TIPA town, whilst LA3 does what LA3 does best; holding the frankly ridiculous 60kg dry-hop charge of Mosaic, Simcoe, Vic Secret and Sabro in full suspension; working in tandem to bring all those stonefruit, tangerine, mango, and coconut aromas and flavours to the fore.

Polly's Brew Co DDH Every Piece Matters BBE 10/6/21 Polly's Brew Co
Style : Triple IPA ABV : 10.0% Bottle Size : 440ml Can   Alright, so you've gone and completed the original trilogy, you've gone for the brewer's favourite, where do you go from there? Team sales' favourite! Every Piece Matters is a beer we keep coming back to so often because our raven-haired head of sales loves selling it so much - the simple but mega effective hop bill of Citra and Mosaic being a combination that has followed us from those halcyon Loka Polly days right up to now. In tribute of one of our in-house favourites, it only seemed a natural progression to let it join the amped-up TIPA club and DDH Every Piece Matters is the result. Positively dripping with tangerine, peach, and passionfruit notes, with just a little bit of grapefruit to back things up, we've pulled every little bit of flavour we possibly can into this beer. Awesome.

Polly's Brew Co DDH Spur Polly's Brew Co
Style : Triple IPA ABV : 10.0% Bottle Size : 440ml Can   The original big one is back. We always had it in the back of our minds that a TIPA would be a natural progression after nailing down our DIPA game, and boy have we taken to the style with aplomb. Quite possibly the best beer we’ve ever brewed by a country mile; in-house favourite Spur is amplified to the max, with heavy lashings of Azacca, Simcoe and Citra thrown in giving massive amounts of stone fruit, peach, mango, and passionfruit flavours bursting throughout, we’ve taken this beer to the next level by adding 1kg of Citra Spectrum to the mix, and recirculating the dry-hop to rinse out every ounce of flavour that we can. Fermented with our house strain of LA3 for maximum suspension, expect juice to the nines, complimented by a soft but full bodied mouthfeel.

Polly's Brew Co Defending Backbeat Polly's Brew Co
Style : India Pale Ale ABV : 6.5% Bottle Size : 440ml Can   Very occasionally, it’s nice to put our collective heads together here at HQ and just let what we’re really good at and can do naturally happen with one of our beers. Not everything has to be drenched in 30g/l dry hopping rates; it’s perfectly fine to have an IPA that allows the supporting cast to really show its characteristics and shine alongside the hype. A solid backbone of extra pale malt, wheat and oats lays a foundation of biscuity sweetness, before our favourite hop pairing in Polly’s stalwarts Citra and Simcoe bring pineapple, honeymelon, mango and papaya juice to the table, rounding off with just a smattering of bitterness from an 80 degree whirlpool addition of Mosaic balances everything out. All kept together with our bespoke LA3 yeast strain, this is us doing exactly what we do best.

Polly's Brew Co Disco Infiltrator Polly's Brew Co
Style : India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   Our staff-designed beers are back again for 2021, and this time around, all bets are off - no style is sacred, and no corners are being cut. First up this time is Disco Infiltrator, designed by our very own Head of Sales Arron. Waxing lyrical for his love of everything West Coast, it's almost become infamous within the walls of the brewery our ongoing quest to make in his mind, the perfect West Coast IPA. We've gotten close plenty of times, but that quest to quench goes on. No longer though - in collaboration with our brewers, we've pulled a recipe out that when tasting after canning, made Arron go "Yep, this is it lads". Going 90% Pale/10% Crystal on the grist bill, and almost entirely hot side on the hopping, this beer is piney, resinous, and a perfect homage to those incredible breweries without whom we wouldn't exist.

Polly's Brew Co Electric Sunrise BBE 9/1/21 Polly's Brew Co
Style : India Pale Ale ABV : 6.5% Bottle Size : 440ml Can   Despite the best efforts of the weather in the UK currently, Summer has very much arrived and is in full force here, and what better way to celebrate those long hazy days than a mega hazebomb of a beer, trapping all that sunshine into the glass. We've brought in every brewer's new favourite superyeast Kveik to the party to create a beer that has a bucketload of complexity, whilst retaining maximum drinkability. In house favourite combo Citra and Mosaic smashes into the old school duo of Comet and Columbus for a beer that is high on juice, but with that signature old school Polly's bite we love so much. Expect a beer that leaves a Mark in both aroma and flavour, with a swagbag of juicy papaya and passionfruit notes paired up with solid grapefruit and pithy orange, finished with a little spicy complexity on the end

Polly's Brew Co Endless Festoon BBE 28/1/21 Polly's Brew Co
Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   As we mentioned in our last team-designed beer with Yellow Blaze, we love that being part of Team Polly's is more like being part of a big brewery family. Our second in this series is the shortest collaboration beer we've ever done - brewhouse meets office with Endless Festoon, designed by our own Head of Sales, Arron. A big fan of melding all things old school and new school into a smashed up hybrid, this beer features a tag team of new school hops in Azacca and El Dorado taking on old school stalwarts Citra and Enigma for a beer that pays homage to those OG beers without whom we wouldn't be here today, whilst fully embracing the new school juicebomb vibe we've become so famous for. Stonefruits, tangerine and piney resin notes are about in this all out smasher of a DDH Pale.

Polly's Brew Co Fady Polly's Brew Co
Style : India Pale Ale ABV : 6.5% Bottle Size : 440ml Can   There's just something about our beers when they hit that 6.5% mark. We can't quite describe what it is, but whether it's the mouthfeel being full enough to not be soupy, or the hop intensity to be just bang on the money without being too overpowering, there's just...something we can't help singing the praises for. Fady makes no exception to this rule, with a relatively low key dry hop charge of 10kg each of Chinook and Mosaic, and smaller 5kg additions of Citra and Ekuanot. This reeled back approach to the hop bill doesn't take any liberties with the flavour profile however, with a crescendo of tangerine, mango and grapefruit notes, before being reeled back in with piney bitterness from the old school hops. All wrapped up in our signature LA3 yeast strain, this is 100% Polly's to a T.

Polly's Brew Co Falter Polly's Brew Co
Style : India Pale Ale ABV : 7.2% Bottle Size : 440ml Can   What do you do when stumble upon 60kg of Mosaic without a home? Throw it all into a single beer, that's what! We're huge fans of Mosaic here at Polly's. The hop varietal that literally changed craft beer forever always has a special place in our brewery, and after celebrating it in previous beers - Fickle in 2019, and Keeler in 2020, we're hitting up the 2021 edition with all the techniques we've learned over the last three years in Falter. Absolutely loaded to the nines with this awesome stateside favourite, we've supercharged this IPA with a 50kg dry-hop charge and a 10kg whirlpool addition to create a beer positively dripping with a medley of intense flavour profiles. Think blueberry, bubblegum, and mango notes, paired up with an earthy complexity before rounding off with a pithy bitter finish. A suitably complex hop that earns its moniker - Mosaic, it's fair to say that we absolutely bloody love you.

Polly's Brew Co First Verse, Twice BBE 10/6/21 Polly's Brew Co
Style : India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   We confess to being big music heads here at Polly's HQ, with a huge spectrum of styles appreciated brewery-wide. Whether it's a "Champagne Supernova", a "Killing in the Name", or an "Orange Crush", there's just something that's always stuck in our minds about how uniquely memorable a repeated first verse is. We wanted to apply this concept to a beer, and First Verse, Twice was born. Featuring a first verse of El Dorado in the boil, we added a healthy chorus of Mosaic and Simcoe during fermentation, before coming back for another go around on El Dorado once again in the dry-hop. The result is a juicebomb of a beer, positively dripping with notes of tangerine, jelly tots (yes, really) and red grapefruit for balance. An all out explosion of flavour; Team Polly's doing what we do best

We’re huge fans of Mosaic here at Polly’s. The hop varietal that shaped modern beer as we know it always has a special place in our brewery, and after celebrating it in previous beers, we’re levelling it up with a fully 2021 vibe in Floating Through the Surface. Absolutely loaded to the nines with this awesome stateside favourite, we’ve supercharged this single-hopped double IPA with a 50kg dry-hop charge and a 10kg whirlpool addition to create a beer positively dripping with a medley of intense flavour profiles. Polly's Brew Co Flora, Fauna, Air & Water Polly's Brew Co
Style : Gose ABV : 6.0% Bottle Size : 440ml Can   Our staff-designed beers are back again for 2021, and this time around, all bets are off – no style is sacred, and no corners are being cut. This time our brewer Joe takes the reins with Flora, Fauna, Air & Water – an absolutely huge tribute to the triple-fruited gose style perfected by our pals North Brewing. Choosing to use Sloe berries, sour Cherries, and blackberries in his beer, along with some of that Halen Môn sea salt left over from Smooth Craze a couple of weeks ago, this beer is touching smoothie levels of thickness; with blackberries bringing sweet tart notes to the party, before some intense plum sweetness joins from the sloe berries, before rounding off with some subtle sweet shop candied sourness from the old Polly’s

Polly's Brew Co Goodbye Gravity Polly's Brew Co
Style : India Pale Ale ABV : 6.2% Bottle Size : 440ml Can   Our prominent use of Citra and Simcoe as a pairing over our three years definitely proves it takes two to tango, but it definitely takes three to jive. Step forward, El Dorado. The dank, sweet and juicy notes that one of our favourite hop pairings imparts is taken to a whole new level by another in house favourite varietal, with ripe mango, papaya and (no, really) jelly tots to boot. A beer that features a welcome return of our pyramid dry-hopping technique after a short spell on the sidelines, we've let Citra take the lead here, with progressively lower additions of El Dorado and finally Simcoe to create a beer that is all about that daytime beer garden supping.

Polly's Brew Co Hi, Everything's Great Polly's Brew Co
Style : Double India Pale Ale ABV : 8.0% Bottle Size : 440ml Can   Sometimes, you’ve just got to take a look at your available hops and just go “Yep, we’re going as big as possible today”. With our Double IPAs being arguably our strongest output in terms of how dialled in we have our processes at this point, we’ve given our brewers the opportunity to let their hair down and have some fun with the dry hop bill on this beer. Hi, Everything’s Great features a quite frankly insane seven different hop varietals in equal measure, with a medley of in house favourites Simcoe, Mosaic, Enigma, El Dorado, Ekuanot, Citra and Columbus combining to create a Frankenstein’s monster mega haze-bomb, maxed out, juicy DIPA. Expect to find tangerine, pineapple, papaya and jolly tot notes, backed up with just a hint of grassy bitterness and herbal complexity to boot.

Polly's Brew Co High Speed Soul Polly's Brew Co
Style : DIPA ABV : 7.9% Bottle Size : 440ml Can   After three and a half years of nudging and pleading with our hop supplier, the golden goose is finally starting to bear some fruit - the South Pacific hops are finally starting to drop with abundance here at Polly's HQ! What better way to celebrate than going all in with an all-Aussie DIPA? High Speed Soul is the first of what we hope to be an absolute tidal wave of next-level Polly's IPAs and DIPAs; reinforcing why South Pacific hops are amongst the highest demand and sought after varietals in the world. Galaxy brings a whole host of passionfruit, peach and citrus fruit notes initially, before Vic Secret cuts in with huge notes of clean pineapple, balanced out with those pine and herbal notes from this incredible hop varietal. Thick, juicy, dank, and 100% Polly's.

Polly's Brew Co Holy Ghost Love BBE 23/9/21 Polly's Brew Co
Style : India Pale Ale ABV : 7.2% Bottle Size : 440ml Can   In the same way we're actively embracing styles we're not necessarily known for in 2021 here at Polly's HQ, we're firm believers that at no point should we be resting on our laurels with our pale and hoppy beers, and the next one should always be better than the last. Holy Ghost Love is a continuation of our opinion that our beers keep gradually improving the more we learn and become in sync with our new brewkit. We've opted for a mammoth 50kg of Simcoe, Galaxy and Simcoe in the dry hop to impart a metric tonne of mango, pineapple and nectarine notes up front, before being reeled back in with a light spritzy bitterness from our use of Simcoe on brew day. All wrapped up in our bespoke LA3 strain, this beer is thick, pulpy, juicy, and 100% Polly's. Awesome.

Polly's Brew Co Huskle Polly's Brew Co
Style : Double India Pale Ale ABV : 8.5% Bottle Size : 440ml Can   In our humble opinion, we think we've really nailed Sabro as a hop varietal here at Polly's HQ. As a mega hype hop, it's super easy to tip the scale in the wrong direction with this incredibly potent varietal by using way too much, and our brewers have really taken to getting that fine line perfectly balanced. Huskle is an experiment into going heavy on the old school hops, and letting exactly half the amount of Sabro take the reins for the new school juice column. Featuring equal parts 20kg each of Centennial and Chinook, this beer has all the grassy, piney bitter notes we love about those old school beers, before a 20kg Sabro dry-hop charge jumps in with those incredible coconut, mint, and lime flavours. I think it's safe to say, Sabro - we absolutely love you.

Polly's Brew Co In Totu Polly's Brew Co
Style : Berliner Weisse ABV : 4.6% Bottle Size : 440ml Can   We were delighted to take part in this year's International Women's Collaboration Brew Day here at Polly's; with Amber Dernulc of Queer Brewing coming down to the brewery to help with the recipe design, name, and actual brewing of the beer itself. In Totu - a play on in toto, literally "togetherness" or "as one", is our beer brewed to this year's theme of compassion. A bold, vibrant, and awesome looking bright pink take on the Berliner Weisse style; we loaded this with locally sourced rose water and hibiscus to create a tart, but equally sweet beer that reminds us just why we love collaborating and sharing ideas with other people here at the brewery.

Polly's Brew Co Informal Edits BBE 18/2/21 Polly's Brew Co
Style : India Pale Ale ABV : 6.7% Bottle Size : 440ml Can   IPA - the style without which we wouldn't be here today. We are famous (or infamous, your call!) for our passion for paying homage to all things old school here at Polly's - tipping a glass to the OG craft beer heroes. With Informal Edits, we wanted to smash together the classic old school bite of a west coast IPA with the soft, pillowy juice of a NEIPA for a hybridised IPA that carries the qualities of both. A heavy heavy 40kg dry hop charge of Citra and Columbus pairs up with a 10 minute whirlpool addition of even more Citra for an IPA that has equal parts soft and delicate notes, with super soft juicy notes to boot, with maximum drinkability in mind.

Polly's Brew Co Introducing Blooms Polly's Brew Co
Style : India Pale Ale ABV : 7.2% Bottle Size : 440ml Can   The end of the year is always the best for any hop-forward beer fan, as we tend to look through our hop store, see what we have loads of, and pack as much as we physically can into a beer. Just as much happened when we discovered that we had plenty of El Dorado, Citra and Simcoe sitting in our cold store, so naturally, we figured we'd brew an IPA, but hop it to the same level as one of our DIPAs for a full on flavour explosion of a beer. Citra and Simcoe is a classic Polly's combo, positively dripping with grapefruit, tropical, and pine notes, but adding El Dorado brings it to an entirely new level, adding pear, watermelon and stonefruit flavours to the party. Generously hopped using our new "pyramid" technique, each level of this beer is distinct in its flavour and an absolutely incredible experience from start to finish.

Polly's Brew Co Jennasea Polly's Brew Co
Style : Double India Pale Ale ABV : 8.0% Bottle Size : 440ml Can   If we've said it once, we've said it a thousand times. There's nothing we love more here at Polly's HQ than showcasing our talents as a modern day brewery, whilst simultaneously paying homage to the brewers of yesteryear without whom we wouldn't exist today. Jennasea has one foot in the present whilst also turning back to look at the past; Mosaic representing the juicy, tropical, dank beers of today, and Amarillo representing the old school stalwart hops, bringing those old school piney vibes to the fore. Amplified up to 60kg in the dry-hop, expect clementine, bubblegum and berry notes playing perfectly against floral, citrussy lemon.

Polly's Brew Co Largo Polly's Brew Co
Style : IPA ABV : 6.2% Bottle Size : 440ml Can   Whilst we’re definitely influenced by those old school brewers of yesteryear, the look and feel of our beers are undoubtedly planted firmly in the new school. Without the New England haze-craze brewers, there would be no Polly’s, and we’re paying homage to those world renowned breweries with Largo. When brewing this beer we upped the mash temperature ever so slightly to our usual, meaning we’ve been able to draw out more long sugar from our grain bill, resulting in a slightly higher starting gravity, and with that, a marginally sweeter finished beer. Paired up with a medley of new school hype-hops in Talus, Galaxy, Mosaic and a final lashing of Citra for good measure; expect to find gooseberries, pulpy tangerine, mango and papaya, backed up with an absolutely massive silky mouthfeel.

Polly's Brew Co Lenno Polly's Brew Co
Style : Table Saison ABV : 2.9% Bottle Size : 440ml Can   We’re just about hitting that post-peak time of summer right about now; the nights are starting to draw back in, but it’s still warm enough for a beer in the garden after a long day of graft. As Saisons were typically brewed to quench the thirst when working those long hours in the summertime, we wanted to brew a beer that we in turn could enjoy after a long day at the brew kit. Step forward Lenno; a modern table-style Saison rocking in at a reserved 2.9%, but whilst we’ve held it back on the ABV, this is a Saison that packs a punch – think stonefruit and tropical notes from the addition of Loral and Simcoe during fermentation, playing of some funky farmyard notes from the delight that is BE-134 yeast.

Polly's Brew Co Little Deluxe Edition Polly's Brew Co
Style : Pale Ale ABV : 5.0% Bottle Size : 440ml Can   El Dorado is one of our favourite hops at Polly’s HQ and for good reason. After three iterations as a maxed out, amped up IPA, we've decided this time to bring everything we love about this beer down to a sessionable strength with Little Deluxe Edition. Our celebration of all things El Dorado; a varietal that we love to work with, and one that carries a backstory as mysterious as the mythical city it's named after. With an aroma of ripe mango, papaya and, in our brewers opinion, Jelly Tots (yes, really), it tricks a drinker into believing they’re in for a hype juice explosion. By the time it hits the palate, all of those amazing citrus notes we love so much come to the fore and an all out attack of pithy bitter notes rock up to the party. A single hop, maxed out hop bill in tribute to one of our favourite varietals, this time brought down to a session strength; El Dorado, we salute you.esome.

Polly's Brew Co Little Every Piece Matters Polly's Brew Co
Style : Pale Ale ABV : 5.0% Bottle Size : 440ml Can   In the same way that we love to scale up our beers, we love to take on the challenge to see if we can fulfil the flavour intensity and body of one of our IPAs, but reeled back to a sessionable strength. Every Piece Matters is an undoubted darling of our Augment range, and we wanted to show just how much we love this incredible beer by bringing the ABV right down to a palatable 5%, whilst maintaining everything that made it so incredible in the first place. Our classic mash of extra pale, oats and wheat provides a solid base before that unparalleled dry hop bill of Citra and Mosaic unleash a full on juice explosion with a metric tonne of mango, passionfruit and papaya notes, before being reeled back in with our whirlpool addition of both providing an earthy bitterness to finish.

Polly's Brew Co Lost Again Polly's Brew Co
Style : Pale Ale ABV : 5.4% Bottle Size : 440ml Can   We'll admit it, we've been hitting it pretty hard with the ABVs lately. Now that the weather is perking up just a little bit, we find there's nothing better (at least until the pubs open in Wales anyway) than spending an afternoon in the park with some - socially distanced of course - mates, and a cooler full of tinnies for good times and laughs. Lost Again is a beer specifically designed just for this sole purpose - hazy but not opaque, juicy but not overwhelming, full of mouthfeel but not soupy. Featuring a reeled back, chilled out, Amarillo, Citra and Mosaic hop bill, this beer ticks all the typical Polly's boxes; with tropical notes a-plenty, but with a pleasant spiky bitterness to keep everything in check. A sign that summer is just around the corner, and normality with it.

Polly's Brew Co Lotus Water Polly's Brew Co
Style : Double India Pale Ale ABV : 8.8% Bottle Size : 440ml Can   Every now and again, you’ve just got to let your hair down and make a big, bombastic, silly beer. Higher end of the DIPA spectrum? Check. Double dry-hopped? Check check. The biggest pyramid addition we’ve done to date? Check! Lotus Water is our experiment into seeing how far we can take this technique, and the result on this beer is a spectacular fruit salad explosion of flavour. A huge 30kg addition of Mosaic takes the lead on this beer, imparting that insane medley of stone fruit, bubblegum and blueberry notes that only Mosaic can, accentuated with progressively smaller charges of Amarillo and Centennial for grassy balance, before a final addition of Sabro for a final lashing of tropical pina colada notes.

Polly's Brew Co More Than Dreaming Polly's Brew Co
Style : IPA ABV : 6.5% Bottle Size : 440ml Can   We make no secret of just how much we love Mosaic here at Polly's HQ, whether it's hot side or cold side, we absolutely love how much this incredible varietal makes our beers pop thanks to the complexity that warrants its name. Whilst we've done single hop Mosaic showcases before - hello Fickle and last year's Heavy Moon - we've never gone as big as we have with More Than Dreaming. With a frankly crazy 65kg all in, this beer is bursting with the typical Mosaic notes; a medley of berries, bubblegum, and mango, with some of the lesser picked up flavour profiles - rosewater, tangerine, as well as earthy bitterness to round everything off.

Polly's Brew Co Movies In The Jacuzzi BBE 13/2/21 Polly's Brew Co
Style : India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   It's back again! We first brewed Movies before lockdown as a keg only beer and an experiment into more expansive fruit additions to our beers. Named in honour of one of our favourite movie villains - Back to the Future Part II's Biff Tannen, this beer is pure Lally down to a T. We've mixed up one of our usual IPAs with masses of Guava added during fermentation. Padded out with a generous helping of dextrin and oat malts to bring the sweetness up to the next level, and dry-hopped with Amarillo and Chinook hops to bring a little bit of pine and a tropical complexity on board, this is a beer that best displays the talents of our wonderful head brewer.

Polly's Brew Co Murmurations BBE 26/2/21 Polly's Brew Co
Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   After a short period of fallow time, our in-house DDH Pale series returns once again, with Murmurations headed up by our second ever employee at the brewery, our very own Scott. Taking the reins entirely from recipe to artwork, Murmurations features a technique employed by Scott known as “hop bursting”; multi-layering the whirlpool hops to accentuate his dry hop bill of Mosaic, Simcoe, Azacca and Enigma. Gradually adding a small amount of Mosaic at 100 degrees, before dropping the whirlpool down to 87 degrees and adding his main whirlpool addition of Simcoe, the result is that each individual varietal is distinguishable throughout – possibly our most crushable DDH Pale yet.

Polly's Brew Co Nada BBE 29/7/21 Polly's Brew Co
Style : Double IPA ABV : 8.0% Bottle Size : 440ml Can   It's back! Nada was a phenomenon with drinkers when we first brewed it in 2019; its high juice, low bitterness flavour profile directly inspired by the American haze craze brewers without whom we wouldn't exist today. Revisited again in 2020 because we loved brewing it so much, we're back again with a 2021 version with an even bigger dry-hop bill than its previous versions at 50kg, this in-house favourite is tasting better than ever. Bringing the big hitters to the table with a metric tonne of Citra, Columbus and Simcoe in the dry hop, this beer is all about the sticky, juicy hops. Expect a swag bag full of dank and tropical hop notes - think tangerine, ripe passionfruit, and mango complimented by a mellow piney bitterness running throughout. A Polly's classic, back and in fine form.

Polly's Brew Co Neither Odd Or Even Polly's Brew Co
Style : Pale Ale ABV : 5.6% Bottle Size : 440ml Can   Anybody who has followed the brewery long enough will know we love to smash together previous hop combos from our dearly departed Originals range and create modern day frankenstein'd-together bangers. Citra Columbus always has a special place in our heart, after a particularly memorable after-work "sampling session" held by Sean and Arron, and we were huge fans of the original version of Enigma Simcoe IPA, so much so that we carried it over to the Augment range that now holds the brewery up. Smashing the two together and reeling back the ABV to a more sessionable 5.6%, we've created a pale ale that brings a swag bag of stone fruit, mango, peach and tangerine notes to the party, with just a little grassy bitterness to boot.

Polly's Brew Co Now Here No Where Polly's Brew Co
Style :  Pale Ale ABV : 5.6% Bottle Size : 440ml Can   Vic Secret is a varietal that we feel doesn't get nearly enough love these days. Pushed out of the way by its more aggressive contemporary Galaxy, we find that this incredible Australian hop has a lot of similarities to its countrymate, but in a much more balanced, easygoing way. We decided to put this thought process into practice with Now Here, No Where - amplifying up the hop bill to that of one of our standard IPAs, whilst keeping things at a relatively sessionable strength. The result is a pale ale that is positively bursting at the seams with pungent tropical pineapple notes. Keeping everything in check with a healthy lashing of in-house favourite Citra, this is a beer perfect for those lockdown Zoom quizzes and Skype pub meetups.

Polly's Brew Co Patternist BBE 19/7/21 Polly's Brew Co
Style : India Pale Ale ABV : 6.6% Bottle Size : 440ml Can   The underrated dark horse of the original Augment trio is back once again! Patternist gained a massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite amongst the staff here at Polly's, and in the brew team's opinion, the best version to date, expect all kinds of high juice and low bitterness notes bursting from this incredible IPA.

Polly's Brew Co Pines Polly's Brew Co
Style :  India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   A fabled story we love to tell about how we're constantly learning; when we were working with our amazing pals at North Brewing Co last year, we were astounded at how little whirlpool hops they added in the first stage of the brewing process. Imparting less bitterness is something we've been keen to explore in our beers, and we achieved this through bringing the whirlpool temp down, and whirlpooling for much less time and adding smaller additions of Enigma and Mosaic, meaning more hops for dry-hopping! Almost 40kg of Galaxy, Mosaic, and Simcoe ended up going into this beer during fermentation, and the results stand for themselves. An absolute juice bomb of a beer, and a marked improvement on version one of this amazing beer.

Polly's Brew Co Plant Sugar Polly's Brew Co
Style : Imperial Sour ABV : 7.0% Bottle Size : 440ml Can   If 2019 was all about polishing the edges we established in our first year, and 2020 was about cementing where we think our pale and hoppy beers should be in terms of quality and technique, then 2021 - our fourth year as an active brewery - is where we start to branch out from our usual comfort zone a little more and brew more styles that help us grow and learn as a team. Plant Sugar treads familiar territory, but amplifies it up to the max for our biggest sour beer to date. The brew plans for this beer simply read "Rhubarb & Quince = LOADS", and boy did we take that one seriously. These awesome fruits meld together for a wonderful jammy tartness, before mellowing back around with a kick of sea salt to keep things interesting. Roll on 2021!

Polly's Brew Co Positively Unattached Polly's Brew Co
Style : Triple IPA ABV : 10.0% Bottle Size : 440ml Can   Every now and again you’ve just gotta shut up and play the hits when it comes to your hop bill. Citra and Simcoe, as well as Galaxy and Mosaic are two of the hop combos that arguably launched us as a brewery back in those seemingly very far away Loka Polly days, and we’ve smashed all four together for a greatest hits medley of our favourite hops in Positively Unattached. Featuring a total of 60kg in the dry hop, and amplified up to TIPA strength because why not? This beer is absolutely dripping with tropical notes, backed up with just a touch of grassy bitterness thanks to a flash in the pan, one minute at a hundred degrees Simcoe addition in the whirlpool to keep everything in check.

Polly's Brew Co Reality Dysfunction Polly's Brew Co
Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   Our staff designed DDH Pale series is certainly gaining some serious traction now, and we're rolling onto another one in rapid time before we take a short break, with the arrival of Reality Dysfunction - designed entirely by our assistant brewer Matt. Expressing his love for our lactose-tinged output, Matt brought the mash temperature right down to ensure the beer wasn't overly sweet, and hit the dry hop up with a bumper dry hop charge of Enigma for a symphony of flavours that dance throughout. Expect intense amounts of raspberries, passionfruit, and just a smattering of herbal complexity, complimented by the sweetness and full body brought to the table by the lactose addition in the boil. Bravo Matt!

Polly's Brew Co Rock Major Polly's Brew Co
Style : Pale Ale ABV : 5.2% Bottle Size : 440ml Can   If we've said it once, we've said it a thousand times - in a world of soupy, pulpy juicebombs, sometimes there ain't nothing more relaxing than just a simple, clean, crisp pale ale. Coming off a year wherein we saturated ourselves with release after release of ultra-high abv beers, we decided to go back to square one and create something a little more on the sessionable side of things; something that we can go back to again and again without having to worry about our heads the next morning. Featuring two hop varietals we fell in love with last year in Loral and Sabro, this beer bursts with the usual Polly's checklist - tropical, juicy and coconut vibes from Sabro, but much more balanced and approachable thanks to the lemon and dark fruit notes brought to the table by Loral. Long live the pale ale!

Polly's Brew Co Rosa Polly's Brew Co
Style : Imperial IPA ABV : 8.5% Bottle Size : 440ml Can   The big hoss is back. If Galaxy Mosaic IPA was the beer that set off some rumbles for us, then Rosa was the beer that smashed through the glass ceiling and planted us firmly on the map; gaining near-universal praise from drinkers and industry insiders when we first brewed it nearly two years ago for our UK-wide Augment launch. For all the incredible places our Augment range has branched off into since 2019, we love coming back to what we feel is the benchmark for our DIPAs, and our brewers certainly get giddy with excitement when they know our headline beer is back on the brew plans. Featuring a five-hop mega line up of Simcoe, Galaxy, Mosaic, Citra, and Ekuanot, this beer is sticky, juicy, piney and dank – 100% Polly’s. Welcome back, Rosa.

Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   Simcoe, Simcoe, Simcoe. Where would we be without you? A strong contender for our in-house favourite varietal purely on the basis of how adaptable it is, we've utilized this giant of the brewing scene on single hop showcases across the board, from DIPA to IPA, now it's the turn of a more sessionable effort, with us loading this DDH Pale Ale with the same dry hop charge as one of our big IPAs, bordering on DIPA territory. Featuring an insane 40kg, and with an ultra light sprinkling in the whirlpool; apricot, passionfruit and citrus notes are positively bursting out of this beer, before being reeled back in with a healthy balance of earthy pine bitterness. With everything wrapped up in a warm hug of our bespoke LA3 yeast strain, this is our love letter to one of the true superstar hops.

Polly's Brew Co Shine Mode Polly's Brew Co
Style : India Pale Ale ABV : 6.0% Bottle Size : 440ml Can   The humble IPA - the style without which we wouldn't be here today. We are famous for our passion for paying homage to all things old school here at Polly's - tipping a glass to the OG craft beer heroes. With Shine Mode, we wanted to smash together the classic old school aggressive bite of a west coast IPA with the soft, pillowy juice of a NEIPA for a hybridised IPA that carries the qualities of both. A heavy lead hop charge of Citra and Vic Secret before progressively smaller additions of Columbus, Sabro and Mosaic create an IPA that has equal parts soft and pillowy notes, with aggressive bitterness to boot, all the while with maximum drinkability in mind.
