Polly's Brew Co A Cozy Decomposure Polly's Brew Co
Style : India Pale Ale ABV : 6.6% Bottle Size : 440ml Can   Azacca is a big favourite here at Polly's HQ and for good reason. Named for the Haitian god of agriculture, and bred specifically to accentuate the intense sweet, tropical notes it imparts, we find this varietal grossly underused and underrated in a sea of more popular hype hops. Letting it do its thing in a single hop showcase seemed the most fitting tribute for this awesome hop, and in a "well, why not" move we decided to up the dry-hop bill to DIPA levels, with an insane 40kg added during fermentation. Wrapped up in a hearty lashing of LA3 for maximum suspension, the result is a thick, juicy IPA, bursting with tonnes of mango, stone fruit, and pineapple notes, before levelling off with a healthy tickling of bitterness on the end for ultimate balance.

Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   Mosaic and Simcoe is a combination that has followed us from near enough the very beginning of this humble little North Walian brewery. All the way from those halcyon Loka Polly days, to the insane IPA we brewed for the Little Summer Beer Bash in 2018, right the way through to the Augment range and beyond, we always fall back to this combo because it's just so darn good. Sweet pineapple notes are prominent, with underlying flavours of mango, orange sherbert, and just the faintest little bit of pithy bitterness. With the sun now starting to peek its head out, we're letting everybody know with this beer that summer is definitely on the way

Style : Double India Pale Ale ABV : 8.0% Bottle Size : 440ml Can   We’ve developed a real taste for going big here at Polly’s HQ, and we’re sating our taste once again with Amateur Dance. Our owner Sean has taken the lead on this one, employing his pyramid dry-hopping technique to full effect in this maxed out, full on DDH DIPA. Mosaic is the dominant hop varietal with a huge 30kg added, before progressively smaller additions of El Dorado and Simcoe accentuate and give this beer multiple levels of depth. Named in honour of his soundtrack for when he works into the small hours to ensure our brewers have as stress free a brew day as possible, this huge beer absolutely drips with dank, stonefruit, mango and pineapple notes, before being reeled back in by a hearty pine finish for balance.

Style : Barleywine ABV : 8.2% Bottle Size : 440ml Can   Okay, so Polly's have thrown a curveball by releasing a Best Bitter last week, where on earth will they go next? Turbo-best, that's where. A style that we've always looked at from afar with starry eyes, it caught us off guard when our very own Lally told us he'd already brewed a couple back in his Mad Hatter days. Fast tracking it into our brew plans as quickly as possible to take advantage of the slightly cooler temperatures of February and early March, the result is An Upfront Wither. An American style barleywine; we've taken inspiration from the OG Stateside brewers generously hopped this beer with Centennial to add a distinct grassy bitterness to pair off against the sweet dried fruit notes brought to the table by the malt bill. Best enjoyed (in our opinion anyway) in a big snifter glass in front of a fire, this beer is another push for us to really expand what we're capable of as a brewery.

A beer with one eye on those amazing triple fruited gose series of beers brewed by our pals up at North, but with a signature Polly's stamp all over it, we've absolutely loaded this beer to the nines with kiwi, lime, pear and honey melon to create a massively fruit-forward Berliner with enough sourness to keep everything in check. Style : India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   We'll always maintain that a Citra and Mosaic base dry hop is unbeatable, but where to go from there? We're already massive Sabro converts, so it was a given that we'd be adding this, but why not throw some Bru-1 into the mix - a hop varietal we've as yet not used at Polly's. Named for an "ism" coined from the brewery when we discovered all these new varietals now available, we've supercharged this beer with a dry hop of 40kg, resulting in freshly cut pineapple aroma and flavours from Bru-1 complimenting the pina colada notes of Sabro, and accentuating the tropical fruit notes of Citra and Mosaic in an IPA that is mega juicy, mega hazy, and mega Polly's.

Clean, balanced, and ultra accessible for a hazy IPA, we've loaded the dry hop on this beer with a hearty helping of Mosaic for new school juicy tangerine, mango and tropical vibes, and pulled everything together with just the slightest bit of Columbus for old school grassiness and pine to finish off. In tribute of one of our in-house favourites, it only seemed a natural progression to let it join the amped-up TIPA club and DDH Every Piece Matters is the result. Positively dripping with tangerine, peach, and passionfruit notes, with just a little bit of grapefruit to back things up, we've pulled every little bit of flavour we possibly can into this beer. Getting lost in the hype of our birthday release, this maxed out, amped up style is something we feel we've been gradually developing alongside our DIPAs as one of our strongest outputs. After completing the original Augment trio and the staff favourites for our DDH series, we're now comfortable enough to let our TIPAs head out on their own without the rub of a previous beers reputation to carry it. Deep Fake is a mega charged, all-in tribute to our favourite hop varietal here at Polly's HQ - Simcoe. Style : India Pale Ale ABV : 6.5% Bottle Size : 440ml Can   Very occasionally, it’s nice to put our collective heads together here at HQ and just let what we’re really good at and can do naturally happen with one of our beers. Not everything has to be drenched in 30g/l dry hopping rates; it’s perfectly fine to have an IPA that allows the supporting cast to really show its characteristics and shine alongside the hype. A solid backbone of extra pale malt, wheat and oats lays a foundation of biscuity sweetness, before our favourite hop pairing in Polly’s stalwarts Citra and Simcoe bring pineapple, honeymelon, mango and papaya juice to the table, rounding off with just a smattering of bitterness from an 80 degree whirlpool addition of Mosaic balances everything out. All kept together with our bespoke LA3 yeast strain, this is us doing exactly what we do best.

Style : IPA ABV : 7.2% Bottle Size : 440ml Can   We're all about pushing our own boundaries here at Polly's HQ. Whilst 2020 was an awful year all around, it's allowed us to put our heads down and focus on making our pale and hoppy beers the best they can possibly be. Our favourite discovery of last year was easily our patented pyramid dry-hopping technique. Seeing as it would be our final packaged beer of the year, we figured we may as well see how far we can go with this technique, and have gone for four different varietals on this beer, as opposed to our usual two. A hearty 20kg addition of Citra is followed up by 15kg, 10kg and 5kg of Mosaic, Centennial and Sabro respectively to accentuate each individual flavour profile on this amped up, maxed out, juice-fest of an IPA, with just the faintest touch of bitterness to keep things in check.

We've brought in every brewer's new favourite superyeast Kveik to the party to create a beer that has a bucketload of complexity, whilst retaining maximum drinkability. In house favourite combo Citra and Mosaic smashes into the old school duo of Comet and Columbus for a beer that is high on juice, but with that signature old school Polly's bite we love so much. Expect a beer that leaves a Mark in both aroma and flavour, with a swagbag of juicy papaya and passionfruit notes paired up with solid grapefruit and pithy orange, finished with a little spicy complexity on the end

Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   As we mentioned in our last team-designed beer with Yellow Blaze, we love that being part of Team Polly's is more like being part of a big brewery family. Our second in this series is the shortest collaboration beer we've ever done - brewhouse meets office with Endless Festoon, designed by our own Head of Sales, Arron. A big fan of melding all things old school and new school into a smashed up hybrid, this beer features a tag team of new school hops in Azacca and El Dorado taking on old school stalwarts Citra and Enigma for a beer that pays homage to those OG beers without whom we wouldn't be here today, whilst fully embracing the new school juicebomb vibe we've become so famous for. Stonefruits, tangerine and piney resin notes are about in this all out smasher of a DDH Pale.

Style : India Pale Ale ABV : 6.3% Bottle Size : 440ml Can   We needn’t remind you that we love all things old school whilst simultaneously melding new school techniques into the beers we create. When designing the recipe for Fake Attentions, we noticed a pattern in that our use of the old school varietals in the dry hop bill was somewhat reserved, with the new school hype hops taking centre stage, and with that, the majority of the sensory notes. We thought “why not flip this one on its head and let an old school hop take the lead?” and Fake Attentions was born. With 20kg of Amarillo leading things alongside smaller additions of Citra, and even smaller additions of Mosaic and Azacca, this beer bursts with punchy orange, and floral notes, before the juice follows up from our new school favourites. Clean, crisp, hoppy, and downright delicious.

Style : India Pale Ale ABV : 7.2% Bottle Size : 440ml Can   What do you do when stumble upon 60kg of Mosaic without a home? Throw it all into a single beer, that's what! We're huge fans of Mosaic here at Polly's. The hop varietal that literally changed craft beer forever always has a special place in our brewery, and after celebrating it in previous beers - Fickle in 2019, and Keeler in 2020, we're hitting up the 2021 edition with all the techniques we've learned over the last three years in Falter. Absolutely loaded to the nines with this awesome stateside favourite, we've supercharged this IPA with a 50kg dry-hop charge and a 10kg whirlpool addition to create a beer positively dripping with a medley of intense flavour profiles. Think blueberry, bubblegum, and mango notes, paired up with an earthy complexity before rounding off with a pithy bitter finish. A suitably complex hop that earns its moniker - Mosaic, it's fair to say that we absolutely bloody love you.

Whether it's a "Champagne Supernova", a "Killing in the Name", or an "Orange Crush", there's just something that's always stuck in our minds about how uniquely memorable a repeated first verse is. We wanted to apply this concept to a beer, and First Verse, Twice was born. Featuring a first verse of El Dorado in the boil, we added a healthy chorus of Mosaic and Simcoe during fermentation, before coming back for another go around on El Dorado once again in the dry-hop. The result is a juicebomb of a beer, positively dripping with notes of tangerine, jelly tots (yes, really) and red grapefruit for balance. An all out explosion of flavour; Team Polly's doing what we do best

Style : India Pale Ale ABV : 6.1% Bottle Size : 440ml Can   Right from the get go, we've been big fans of anything that has come out of Ed Banger Records in France, and in particular Mr Oizo. We've always wanted to pay homage to the Parisian beat masters with an all out banger of an IPA, and when designing this beer Marked it down almost immediately as a future banger. Old school meets new school here with floral and resinous notes from OG hop varietal mixed up with new school stalwart Mosaic for bags and bags of tropical fruit salad notes, all wrapped up in a generous lashing of Kveik for some next level complexity. A beer that just absolutely bangs, like its namesake

Style : India Pale Ale ABV : 6.8% Bottle Size : 440ml Can   When we were taking on our hop contract for this year, our rep made mention of Bru-1, and how it goes well with either Mosaic, Sabro, or Citra. Happily taking some on, the hop pairings they mentioned had always stuck in our head, and when we came to write recipes for our Autumn release schedule we thought to ourselves "Why not brew a beer with all the hops Bru-1 pairs well with?", and Future Infinity was born. Utilizing mainly Mosaic in the dry hop, with a 15kg dry hop charge initially followed by equal 5kg mini-charges of Sabro, Citra and Bru-1, this beer bursts with heavy pineapple notes, with coconut and tangerine following in abundance, before mellowing out into a medly of berry notes from Mosaic, and finishing with crisp citrus thanks to our old dependable, Citra.

Style : India Pale Ale ABV : 6.2% Bottle Size : 440ml Can   Our prominent use of Citra and Simcoe as a pairing over our three years definitely proves it takes two to tango, but it definitely takes three to jive. Step forward, El Dorado. The dank, sweet and juicy notes that one of our favourite hop pairings imparts is taken to a whole new level by another in house favourite varietal, with ripe mango, papaya and (no, really) jelly tots to boot. A beer that features a welcome return of our pyramid dry-hopping technique after a short spell on the sidelines, we've let Citra take the lead here, with progressively lower additions of El Dorado and finally Simcoe to create a beer that is all about that daytime beer garden supping.

Style : India Pale Ale ABV : 7.2% Bottle Size : 440ml Can   In the same way we're actively embracing styles we're not necessarily known for in 2021 here at Polly's HQ, we're firm believers that at no point should we be resting on our laurels with our pale and hoppy beers, and the next one should always be better than the last. Holy Ghost Love is a continuation of our opinion that our beers keep gradually improving the more we learn and become in sync with our new brewkit. We've opted for a mammoth 50kg of Simcoe, Galaxy and Simcoe in the dry hop to impart a metric tonne of mango, pineapple and nectarine notes up front, before being reeled back in with a light spritzy bitterness from our use of Simcoe on brew day. All wrapped up in our bespoke LA3 strain, this beer is thick, pulpy, juicy, and 100% Polly's. Awesome.

Style : IPA ABV : 6.0% Bottle Size : 440ml Can   With the advent of 2020 came sudden access to a serious amount of hops we had previously only dreamt of brewing with. Idaho 7 was one of the aforementioned varietals,  used by some of our contemporaries as we looked on, green with envy. We've made up for lost time by putting it to serious good use in this beer; featuring a whopping 40kg in the dry hop, we've amplified this beer is loaded to the nines with apricot, red grapefruit, papaya and orange notes initially, before rounding out with black tea and pungent pine flavours to finish. Not content with a full on juice explosion, we decided to bring this beer up yet another level by upping the oats to over 30% of the mash, bringing a metric tonne of silky smoothness to the mouthfeel.

Style : Berliner Weisse ABV : 4.6% Bottle Size : 440ml Can   We were delighted to take part in this year's International Women's Collaboration Brew Day here at Polly's; with Amber Dernulc of Queer Brewing coming down to the brewery to help with the recipe design, name, and actual brewing of the beer itself. In Totu - a play on in toto, literally "togetherness" or "as one", is our beer brewed to this year's theme of compassion. A bold, vibrant, and awesome looking bright pink take on the Berliner Weisse style; we loaded this with locally sourced rose water and hibiscus to create a tart, but equally sweet beer that reminds us just why we love collaborating and sharing ideas with other people here at the brewery.

Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   It feels like an eternity since we last brewed one of our big hitting DDH Pale Ales. With the festive season having come and gone, and Birthday Beers now a thing of the past, we've had a yearning for what we think is the most underrated branch of our output - taking all that flavour intensity of our big hitting IPAs and DIPAs, but reeling it back to a relatively sessionable strength. In Violet is our brew team letting loose and doing what they do best; fully employing our now-signature pyramid dry-hopping technique, this time letting new school classic Mosaic go big with all its super juicy tropical notes, before smaller additions of Amarillo and Chinook do the job of keeping everything in check with grassy pine notes. Juicy, smashable, and totally sessionable.

Style : India Pale Ale ABV : 6.7% Bottle Size : 440ml Can   IPA - the style without which we wouldn't be here today. We are famous (or infamous, your call!) for our passion for paying homage to all things old school here at Polly's - tipping a glass to the OG craft beer heroes. With Informal Edits, we wanted to smash together the classic old school bite of a west coast IPA with the soft, pillowy juice of a NEIPA for a hybridised IPA that carries the qualities of both. A heavy heavy 40kg dry hop charge of Citra and Columbus pairs up with a 10 minute whirlpool addition of even more Citra for an IPA that has equal parts soft and delicate notes, with super soft juicy notes to boot, with maximum drinkability in mind.

Style : India Pale Ale ABV : 7.2% Bottle Size : 440ml Can   The end of the year is always the best for any hop-forward beer fan, as we tend to look through our hop store, see what we have loads of, and pack as much as we physically can into a beer. Just as much happened when we discovered that we had plenty of El Dorado, Citra and Simcoe sitting in our cold store, so naturally, we figured we'd brew an IPA, but hop it to the same level as one of our DIPAs for a full on flavour explosion of a beer. Citra and Simcoe is a classic Polly's combo, positively dripping with grapefruit, tropical, and pine notes, but adding El Dorado brings it to an entirely new level, adding pear, watermelon and stonefruit flavours to the party. Generously hopped using our new "pyramid" technique, each level of this beer is distinct in its flavour and an absolutely incredible experience from start to finish.

There's nothing we love more here at Polly's HQ than showcasing our talents as a modern day brewery, whilst simultaneously paying homage to the brewers of yesteryear without whom we wouldn't exist today. Jennasea has one foot in the present whilst also turning back to look at the past; Mosaic representing the juicy, tropical, dank beers of today, and Amarillo representing the old school stalwart hops, bringing those old school piney vibes to the fore. Amplified up to 60kg in the dry-hop, expect clementine, bubblegum and berry notes playing perfectly against floral, citrussy lemon.

After a single hop showcase paired up with Kveik earlier in the year, it's time for Team Polly's to go back to basics and do what we do best; Mosaic + LA3 = JUICE. To say we've amped up the hop bill on this beer would be an understatement - Keeler has a full 50kg of this incredible varietal thrown into the mix and imparts an absolute metric tonne of berry, bubblegum, and tropical notes, with underlying notes of earthy pine to keep everything all in check. Featuring an all new in-house LA3 strain brought in from the States and designed specifically for us, this beer is everything we love about the new school - opaque, pulpy, all out juice. Absolutely incredible.

Style : India Wheat Ale ABV : 7.2% Bottle Size : 440ml Can   Anyone who has followed the brewery since we started will know that we love to smash together and hybridize beer styles; whether it's dry-hopped saisons or India dry stouts (seriously, they were stouts, not Black IPAs), we love experimentation and creating modern versions of the classics. Lebble is a continuation of this passion; taking the humble wheat ale and giving it a hop-forward, 2021 Polly's shine. A huge dry-hop bill of Azacca and Citra combine with the WB-06 yeast we fermented this beer out with to create an insane explosion of aroma, bouncing with banana-y esters, along with juicy tropical fruits from the generous amount of hops. On the palate, a huge silky mouthfeel marries up with a bonafide fruit salad of flavour - think ripe mangos, papaya, and (seriously) bananas with custard. An insane piece of alchemy from our brewers, and one that has us looking forward to what they're able to pull off next.

After three iterations as a maxed out, amped up IPA, we've decided this time to bring everything we love about this beer down to a sessionable strength with Little Deluxe Edition. Our celebration of all things El Dorado; a varietal that we love to work with, and one that carries a backstory as mysterious as the mythical city it's named after. With an aroma of ripe mango, papaya and, in our brewers opinion, Jelly Tots (yes, really), it tricks a drinker into believing they’re in for a hype juice explosion. By the time it hits the palate, all of those amazing citrus notes we love so much come to the fore and an all out attack of pithy bitter notes rock up to the party. A single hop, maxed out hop bill in tribute to one of our favourite varietals, this time brought down to a session strength; El Dorado, we salute you.esome.

Style : Pale Ale ABV : 5.6% Bottle Size : 440ml Can   We love our DDH pales, don't get us wrong, but sometimes there's nothing better than a straight up, unfussy, clean and crisp pale ale. A beer specifically made with smashability in mind, Lupo Capisco is brewed with the masters of simplicity in mind - our heroes over at The Kernel, who make in our opinion the best pales in the UK. Hopped with a relatively easygoing dry-hop charge of 20kg of Azacca and Citra, this is a beer perfect for those after work pints we love so much. Soft, juicy, and crisp. These two incredible hops bring a swagbag of mango and tropical flavours to compliment their respective pithy bitter notes.

Whilst we've done single hop Mosaic showcases before - hello Fickle and last year's Heavy Moon - we've never gone as big as we have with More Than Dreaming. With a frankly crazy 65kg all in, this beer is bursting with the typical Mosaic notes; a medley of berries, bubblegum, and mango, with some of the lesser picked up flavour profiles - rosewater, tangerine, as well as earthy bitterness to round everything off.

Style : India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   It's back again! We first brewed Movies before lockdown as a keg only beer and an experiment into more expansive fruit additions to our beers. Named in honour of one of our favourite movie villains - Back to the Future Part II's Biff Tannen, this beer is pure Lally down to a T. We've mixed up one of our usual IPAs with masses of Guava added during fermentation. Padded out with a generous helping of dextrin and oat malts to bring the sweetness up to the next level, and dry-hopped with Amarillo and Chinook hops to bring a little bit of pine and a tropical complexity on board, this is a beer that best displays the talents of our wonderful head brewer.

Polly's Brew Co Murmurations BBE 26/2/21 Polly's Brew Co
Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   After a short period of fallow time, our in-house DDH Pale series returns once again, with Murmurations headed up by our second ever employee at the brewery, our very own Scott. Taking the reins entirely from recipe to artwork, Murmurations features a technique employed by Scott known as “hop bursting”; multi-layering the whirlpool hops to accentuate his dry hop bill of Mosaic, Simcoe, Azacca and Enigma. Gradually adding a small amount of Mosaic at 100 degrees, before dropping the whirlpool down to 87 degrees and adding his main whirlpool addition of Simcoe, the result is that each individual varietal is distinguishable throughout – possibly our most crushable DDH Pale yet.

Nada was a phenomenon with drinkers when we first brewed it in 2019; its high juice, low bitterness flavour profile directly inspired by the American haze craze brewers without whom we wouldn't exist today. Revisited again in 2020 because we loved brewing it so much, we're back again with a 2021 version with an even bigger dry-hop bill than its previous versions at 50kg, this in-house favourite is tasting better than ever. Bringing the big hitters to the table with a metric tonne of Citra, Columbus and Simcoe in the dry hop, this beer is all about the sticky, juicy hops. Expect a swag bag full of dank and tropical hop notes - think tangerine, ripe passionfruit, and mango complimented by a mellow piney bitterness running throughout. A Polly's classic, back and in fine form.

Style :  Pale Ale ABV : 5.6% Bottle Size : 440ml Can   Vic Secret is a varietal that we feel doesn't get nearly enough love these days. Pushed out of the way by its more aggressive contemporary Galaxy, we find that this incredible Australian hop has a lot of similarities to its countrymate, but in a much more balanced, easygoing way. We decided to put this thought process into practice with Now Here, No Where - amplifying up the hop bill to that of one of our standard IPAs, whilst keeping things at a relatively sessionable strength. The result is a pale ale that is positively bursting at the seams with pungent tropical pineapple notes. Keeping everything in check with a healthy lashing of in-house favourite Citra, this is a beer perfect for those lockdown Zoom quizzes and Skype pub meetups.

Style : IPA ABV : 6.9% Bottle Size : 440ml Can   We often express how much we love to pay homage to the brewers of yesteryear here at Polly's, without whom we, or our contemporaries alike, would exist as we do. At the same time we love firmly expressing how much we love embracing our status as a very much modern brewery, producing the hop-forward styles so popular today. Ode is our literal address to old school and new school brewing, and our love of embracing the two in our beers. Chinook firmly represents the old school, being generously used in the whirlpool to impart delicious piney bitterness, Citra rocks up as the modern classic in the dry hop, bringing a wave of juicy citrus notes, and the future is handily dealt with by Bru-1 and it's incredible intense pineapple characteristics. Style : India Pale Ale ABV : 6.8% Bottle Size : 440ml Can   Mosaic and Simcoe is a partnership made in heaven. Much like Dre and Snoop, Lennon and McCartney, and Han Solo and Chewbacca, they just go together like a hand in a glove. We made our first move to improve on the wildly popular Originals version of Mosaic Simcoe; bringing it up to Augment level last summer with Summer Generator. Deciding to christen our new brewkit with a beer that consists of our favourite hop pairing bar none, Omen Roam is our Mosaic and Simcoe IPA with the 2021 treatment applied. Featuring twice the amount of dry-hop as the OG version, with a 40kg dry hop charge bringing all those incredible pineapple, mango and passionfruit notes to the fore, this is a beer that drinks just like Lilt for grownups. With just the tiniest little bit of Simcoe in the boil, we've reeled it all back in with just a tickling of bitterness to round this awesome IPA off for that signature Polly's bite.

Style : India Pale Ale ABV : 6.6% Bottle Size : 440ml Can   The underrated dark horse of the original Augment trio is back once again! Patternist gained a massive cult following thanks to it's no frills El Dorado and Simcoe hop bill, albeit hopped up to the absolute nines, and its ornate tiling artwork garnering amazing feedback. A favourite amongst the staff here at Polly's, and in the brew team's opinion, the best version to date, expect all kinds of high juice and low bitterness notes bursting from this incredible IPA.

Style :  India Pale Ale ABV : 6.4% Bottle Size : 440ml Can   A fabled story we love to tell about how we're constantly learning; when we were working with our amazing pals at North Brewing Co last year, we were astounded at how little whirlpool hops they added in the first stage of the brewing process. Imparting less bitterness is something we've been keen to explore in our beers, and we achieved this through bringing the whirlpool temp down, and whirlpooling for much less time and adding smaller additions of Enigma and Mosaic, meaning more hops for dry-hopping! Almost 40kg of Galaxy, Mosaic, and Simcoe ended up going into this beer during fermentation, and the results stand for themselves. An absolute juice bomb of a beer, and a marked improvement on version one of this amazing beer.

Style : Imperial Sour ABV : 7.0% Bottle Size : 440ml Can   If 2019 was all about polishing the edges we established in our first year, and 2020 was about cementing where we think our pale and hoppy beers should be in terms of quality and technique, then 2021 - our fourth year as an active brewery - is where we start to branch out from our usual comfort zone a little more and brew more styles that help us grow and learn as a team. Plant Sugar treads familiar territory, but amplifies it up to the max for our biggest sour beer to date. The brew plans for this beer simply read "Rhubarb & Quince = LOADS", and boy did we take that one seriously. These awesome fruits meld together for a wonderful jammy tartness, before mellowing back around with a kick of sea salt to keep things interesting. Roll on 2021!

Style : Triple IPA ABV : 10.0% Bottle Size : 440ml Can   Every now and again you’ve just gotta shut up and play the hits when it comes to your hop bill. Citra and Simcoe, as well as Galaxy and Mosaic are two of the hop combos that arguably launched us as a brewery back in those seemingly very far away Loka Polly days, and we’ve smashed all four together for a greatest hits medley of our favourite hops in Positively Unattached. Featuring a total of 60kg in the dry hop, and amplified up to TIPA strength because why not? This beer is absolutely dripping with tropical notes, backed up with just a touch of grassy bitterness thanks to a flash in the pan, one minute at a hundred degrees Simcoe addition in the whirlpool to keep everything in check.

Style : Best Bitter ABV : 4.5% Bottle Size : 440ml Can   No really, we're being deadly serious. It's always been a running joke that we should produce a Best Bitter, often getting a chuckle from the team whenever it's mentioned. With it now being a full calendar year since some of us have been to the pub though, we all agreed that one of the things we've missed most throughout this whole lockdown period has been the familiar warmth of a pint of cask bitter. Whilst we're not going as extreme as racking off a load of firkins, we are confident enough in our own abilities as a brewery now that we are comfortable producing a style of beer that, whilst not dripping in insane dry-hopping rates, gives that familiarity of the pub that is within literal touching distance. Letting the malt lead here, we've gone for small additions of Cascade and East Kent Goldings for a pleasant bitterness, and fermented out with SO4 for a little bit of haze to remind that this is definitely Polly's.

We've squeezed every ounce of flavour we can out of this beer - Columbus bringing some surefire old school pine and resin to the table, before being balanced out with a whole host of dank, juicy, tropical notes from the ever dependable brewery favourite, Mosaic. Style : Pale Ale ABV : 5.5% Bottle Size : 440ml Can   Our staff designed DDH Pale series is certainly gaining some serious traction now, and we're rolling onto another one in rapid time before we take a short break, with the arrival of Reality Dysfunction - designed entirely by our assistant brewer Matt. Expressing his love for our lactose-tinged output, Matt brought the mash temperature right down to ensure the beer wasn't overly sweet, and hit the dry hop up with a bumper dry hop charge of Enigma for a symphony of flavours that dance throughout. Expect intense amounts of raspberries, passionfruit, and just a smattering of herbal complexity, complimented by the sweetness and full body brought to the table by the lactose addition in the boil. A strong contender for our in-house favourite varietal purely on the basis of how adaptable it is, we've utilized this giant of the brewing scene on single hop showcases across the board, from DIPA to IPA, now it's the turn of a more sessionable effort, with us loading this DDH Pale Ale with the same dry hop charge as one of our big IPAs, bordering on DIPA territory. Featuring an insane 40kg, and with an ultra light sprinkling in the whirlpool; apricot, passionfruit and citrus notes are positively bursting out of this beer, before being reeled back in with a healthy balance of earthy pine bitterness. With everything wrapped up in a warm hug of our bespoke LA3 yeast strain, this is our love letter to one of the true superstar hops.

Style : India Pale Ale ABV : 6.0% Bottle Size : 440ml Can   We’re big at the moment on nostalgia here at Polly’s HQ – reminiscing about some of our greatest hits from 2020, and Slacks is the next on our list that we felt deserved a revisit. A big IPA all about the juice; Slacks is a conscious effort on our part to aim for a 6% beer, but to be able to fill it with all the flavour intensity and body of one of our stronger IPAs. Hopped to the nines with 30kg of Enigma and Mosaic to bring all those stone fruit, papaya, and mango notes right up to the fore, Slacks is named for an in-joke from the 2019 Polly’s Christmas party, where Arron – ever the fashionista – turned up in some let’s say, questionable slim fitting trousers (and we’ve never let him live it down since). Thankfully there is nothing questionable about this straight up murky juicebomb of a beer. Delicious.
