Holy Goat Citrus Crusher Winter Harvest 2021 Holy Goat
Style : Sour ABV : 6.2% Bottle Size : 375ml We brewed this golden sour with a heritage malt called Scotch Common, grown and malted by Crafty Maltsters in Auchtermuchty, Fife. Fermented with a mixed culture and aged for around three months, before being transferred onto 250l of blood orange and clementine juice, with an additional 50kg of whole fruit, which were zested, pulped, and juiced by hand. These citrus fruits were freshly picked from the winter harvest of Italian organic producers (Cooperativa I Fruitti del Sole & Oroverde).
Holy Goat Crimson Void Holy Goat
Style : Sour ABV : 7.5% Bottle Size : 375ml Inspired by Flanders Reds of old, Crimson Void is a blended sour red ale combining 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in oak barrels. The combination of old and young beers has produced a complex sweet and sour flavour profile with a subtle oak character. This blended base was transferred onto the spent fruit (strawberries) and lees from our previous batch of Oud Bruin – Blood Witch. We refermented this with 200g/l Scottish blackcurrants, sourced from farms located within 60 miles of the brewery.
Holy Goat Hyperviolet Holy Goat
Style : Sour ABV : 6.5% Bottle Size : 375ml BA Golden Sour with Blueberry, Honeyberry and Violet FlowersThis beer is blended from a mix of golden sour fermented with our ‘Seabeast’ Brettanomyces culture, along with another golden sour aged in oak wine barrels for two years (80/20). We refermented this blend with 200g/l of blueberries and honeyberries which were harvested within 60 miles of the brewery, in addition to a hot violet flower infusion.The resultant beer is a deep reddish-purple colour with sweet fresh aroma of violet flowers and forest berries with a slowly developing Brettanomyces funk.
Holy Goat Seabeast Holy Goat
Style : Sour ABV : 6.8% Bottle Size : 375ml Brewed with Scottish malted barley, raw wheat, and rolled oats, this base beer was fermented with a Brettanomyces strain isolated from a renowned Belgian Trappist brewery.   A new strain for us, we are enjoying its stone fruit characteristics, light body, and subtle yet growing funk.   We lightly dry-hopped this beer with Mosaic and Galaxy hop terpenes (isolated aromatic hop compounds), adding some nuance to the aroma.
Holy Goat x Varvar Goats For Ukraine Holy Goat
Style : Sour ABV : 6.5% Bottle Size : 375ml Golden Sour with Buckwheat Honey. Brewed in collaboration with our friends from Varvar Brew, based in Kiev, Ukraine. This blended golden sour beer was brewed with Scottish barley, wheat and oats and fermented with our Brettanomyces strain and mixed culture which produces citrus, stone fruit and a growing funk. We refermented this base beer with raw buckwheat honey which lends a subtle earthy honeyed, jasmine flavour to the beer.
